Don't you miss the simpler days of grade-school lunchtime, when you'd open your Officially Licensed Character lunch box to find the familiar comfort of a homemade peanut butter and jelly sandwich, a bag of chips, and (if you're really lucky!) some tasty tasty cookies? Cheffy certainly misses those days. So he's BRINGING THEM BACK in these these lunch-time at snack-time creations. One bite, and you'll be back on the schoolyard, but without the wedgies and subtraction homework! What could be better? Nothing, we say. Nothing!
For your tastebud time machine, you'll need:
1/2 Cup (1 stick) Butter
1/2 Cup Sugar
1/3 Cup Brown Sugar
1 Egg
1 tsp Vanilla
3/4 tsp Baking Soda
1/8 tsp salt
1 cup Flour
2/3 cup Creamy Peanut Butter
1 Egg White
Potato Chips
Jam
Put the butter in a bowl. Moosh with fork, or beat with electric mixer to get it all soft. Add the brown and white sugars and beat some more. Then add the egg and vanilla and... you guess it. Beat some more!
Add the baking soda and salt to the flour, then mix into the butter/sugar/egg mixture. Stir in the peanut butter. You'll need all your muscles! (Or a hand mixer - that's still an option)
Roll the dough into 1 Tsp balls, then roll the balls in egg whites, then crushed potato chips.
Place cookies on a parchment-covered baking sheet. Make an indentation in the cookies with your pinkie, or whichever finger is most convenient.
Bake at 375 for 12 minutes. Reflecting upon your past optional.
Fill the cookie indentations with jam.
Then serve to all your elementary school friends. Or use their deliciousness to make new friends!
