Every Year in Park City, UT, some of the brightest stars of the culinary world gather to impress the attendees of the Sundance Film Festival. Steven Fretz of Los Angeles's Church Key Restaurant was one of the culinary masters on hand.

Chef Fretz took a little time from the hectic action of the festival to show us how to prepare his signature dish: Taipoca Snapper over charred broccolini and sushi rice, topped with a white soy vinaigrette.

He’ll demonstrate proper shallow frying techniques, show you some sauté skills, and demonstrate some beautiful plating. With the pointers here, you’ll be well on your way to making your own restaurant-worthy recipes for yourself.
