3 easy and delicious meals for a new college student who wants to cook! You can make these in big portions and always have something left over =]
RECIPES:
CAULIFLOWER PIZZA
Ingredients:
2&1/2 Cups Cauliflower
1 Large Egg
1&1/4 Cups Shredded Mozzarella
2 Tbsp shredded Asiago
Salt and Pepper to taste
2 Garlic Cloves
Parchment Paper
AND YOUR TOPPINGS --- I used Tomato sauce, Cherry Tomatoes, Fresh Basil and Balsamic Vinegar
Directions - PREHEAT THE OVEN TO 375
1. Steam the cauliflower for a few minutes
2. Throw the cauliflower, egg, mozzarella, asiago, salt, pepper and garlic into a food processor and process until it becomes somewhat moldable
3. Shape the dough into a circle on the parchment paper
4. Soak up excess moisture
5. Bake Crust until golden brown
6. Top the pizza
7. Bake again until it looks like a pizza!
8. Slice and enjoy!
AGLIO OLIO E PEPERONCINO - I used a Spirooli, but you can use any sort of slicer, even a cheese grater. I got my Spirooli at Gorilla Foods in Vancouver, but you can get one on Amazon as well.
SIDE NOTE: I also like to make this garlic sauce and eat it with eggs instead of noodles, it's super delicious and so easy! You can also use tomato sauce instead of an oil-based sauce if you don't like oil! I've also been experimenting with curry sauces and it is DELIGHTFUL!
Ingredients:
1 Summer Squash (I used Zucchini)
Olive Oil
Garlic
Parsley
1/2 LRG Yellow Onion
Thai Chili Peppers
Directions
1. Spiralize the summer squash into noodle shape
2. Sautee onion in olive oil until translucent
3. Add garlic, cook until fragrant
4. Add peppers, cook until fragrant (around 30 seconds)
5. Add noodles, cook until noodles are warm and absorb the garlic sauce
6. Remove from heat and add parsley
7. Dish up and add parmesan
TACO CHICKEN SALAD - this is one of my favourite recipes, I switched the protein as a preference, and got it from MarksDailyApple.com
Ingredients:
1 Yellow onion (diced)
1 tsp fresh oregano
1 tsp dried thyme
1 tsp ground coriander
1/2 cup chicken stock
1 tbsp lemon juice
Romain lettuce (I chopped up two heads)
About 2 lbs chicken or whatever meat you like
6-8 Mushrooms (chopped) - salt to taste
Directions
1. Cook ground meat about halfway cooked
2. Add garlic and onion, cook until translucent and fragrant
3. Add herbs, cook until fragrant
4. Add mushrooms, red peppers, chicken Stock, lemon juice and salt, (I threw in some basil on top because I can't get enough!)
5. Cook until chicken is cooked
TZATZIKI GUACAMOLE
Ingredients:
2 large ripe avocados
1 English cucumber
1 tbsp fresh mint
1 tbsp fresh dill
1 tbsp fresh lemon juice
DIRECTIONS
1. Grate the cucumber into a tea towel
2. Squeeze excess moisture out of cucumber
3. Throw everything into a food processor and blend until smooth and creamy
Put some romaine in a bowl, add chicken mixture and top with a few spoonfuls of guac (and maybe a bit of hot sauce if you want!). I like to dice up red peppers and spoon the mixture on top!
SIDE NOTE: I try to use local and sustainably sourced foods, but we're college students and we ain't perfect, so don't feel too bad if it's not an option at this point in your life!
