shakshoka is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced with cumin

Ingredients:

1 tbsp olive oil
1/2 medium brown or white onion, peeled and diced
2 clove garlic, minced
1 medium green or red bell pepper, chopped
4 cups ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes
2 tbsp tomato paste
1 tsp chili powder (mild)
1 tsp cumin
1 tsp paprika
Pinch of cayenne pepper (or more to taste-- spicy!)
Salt and pepper to taste
2 eggs
1/2 tbsp fresh chopped parsley (optional, for garnish)

Directions :

Heat oven to 375 degrees.
Heat oil in a large skillet over medium-low heat.
Add onion and bell pepper and garlic
Cook gently until very soft, about 10 minutes.
cook until tender, 1 to 2 minutes; stir in cumin, cayenne, and 3/4 teaspoon salt and cook 1 minute.
Pour in tomatoes and season
simmer until tomatoes have thickened, about 10 minutes.
Gently crack eggs into skillet over tomatoes. Season with salt and pepper.
Sprinkle with cilantro and serve with hot sauce.
