How to Make Pop Overs

Ingredients

2 eggs
1 cup milk
1 cup sifted all-purpose flour
1/2 teaspoon salt

Directions

Preheat oven to 425 degrees. Spray muffin tins with non-stick spray. Into a bowl add eggs, milk, and sifted flour and salt. Beat with a whisk until the mixture is smooth and there are no lumps. Do not over beat, stop when the lumps disappear from the batter. Fill muffin tins 1/2 full. Bake for approximately 15 minutes or until they are golden brown and have popped up. Serve immediately.

If you live in a higher altitude these will take a little longer to cook.
