Easter Egg Petit Fours\r
Makes about 1 dozen petit fours\r
\r
Cake Ingredients\r
1 1/3 cup flour\r
2 tsp baking powder\r
½ tsp salt\r
3 egg whites\r
½ cup (1 stick) butter, softened\r
1 cup sugar\r
2/3 cup milk, room temperature\r

Cake Directions\r
1. Whisk together flour, baking powder, and salt. Set aside.\r
2. Beat egg whites until stiff peaks form.\r
3. Cream together butter and sugar. Alternate adding in dry ingredients and milk, beginning and ending with dry mixture. Fold in egg whites and pour into 9”x9” pan greased and lined with parchment paper. Bake at 350F for 20 min.\r

Icing Ingredients – For double coating petit fours, I recommend 1 and a half or doubling this recipe\r
3 cups powdered sugar, sifted\r
½ tsp almond or vanilla extr\r
2 T light corn syrup\r
¼ cup water\r
Food coloring (optional, but why leave it out? :D)\r

Icing Directions\r
Mix all ingredients besides food coloring together until smooth. Divide icing and color if desired.\r
