Tilapia, walleye or cod work really well in this simple, fast dinner. It takes almost as long to sauté the vegetables as it does to cook the fish so be aware that things move quickly in this recipe. Make your own tartar sauce by mixing together a little mayo, Greek yogurt, parsley and pickle relish. Finish the dish off by squeezing a little lime juice over the fish.
