Very easy (just combine, shape balls and roll into grated coconut) delicious recipe for coconut balls: yummy dessert, everyone will love!
Makes about 30-40 balls, depending on the size you roll them.

Ingredients:
- 500g of plain biscuits, (all purpose crackers, which are slightly sweet, crunchy biscuits)
- 100g of soft butter,
- 2 tbsp of unsweetened cacao powder,
- 200g powdered sugar,
- half teaspoon rum aroma/extract, (concentrated rum flavour)
- sour cherry juice, (about 150ml)
- 50g grated coconut,

Instructions:
1. Crumble the 500g biscuits: (to be like breadcrumbs),

2. Mix the dry ingredients: crumbled biscuits, 2 tbsp of unsweetened cacao powder and the 200g powdered sugar.

3. Add the 100g soft butter, half teaspoon rum aroma, and add gradually about 150ml sour cherry juice while mixing the dough until it nicely sticks together but is still not too wet. Consistency should be paste-like, moist, but not watery.

4. Take small amounts of mixture and roll into balls, then coat them in coconut by rolling them into the grated coconut.

5. Refrigerate for at least 2 hours to let the flavours merge.

Enjoy!
