Uttapam is a popular South Indian recipe. We have made Uttapam with a bit of twist by adding bread as an ingredient. This is a kind of vegan Indian recipe with just yoghurt used.\r

Ingredients for bread uttapam:\r
4 slices of bread\r
½ Cup Suji/Semolina\r
2 Tablespoon All-purpose flour\r
½ Cup Yogurt\r
1 Tablespoon finely chopped Yellow bell pepper\r
1 Tablespoon finely chopped Capsicum\r
2 medium sized finely chopped Onions\r
1 small finely chopped tomatoes (without seeds)\r
Finely chopped Coriander leaves\r
1 tsp Ginger (grated or paste)\r
Chopped green chilly \r
Salt to taste\r
Oil for cooking\r
¼ cup of water or as required\r
\r
How to make uttapam:\r
Trim the sides of bread.\r
\r
Take a bowl and cut or break all the bread into small pieces so that it will get blended easily.\r
\r
Take a mixer grinder and put Semolina/Suji, all purpose flour/maida, yogurt, bread slices, and water, grind it into a thick, smooth and fine paste.\r
\r
Take out the batter in a deep bowl and add all the veggies yellow bell pepper, chopped capsicum, chopped onions, chopped tomatoes, ginger, coriander leaves, salt to taste and mix until well combined.\r
\r
Batter should be in pouring consistency. It should not neither very thick nor runny so add water accordingly.\r
Heat a non stick pan on medium heat and spread little oil on it. \r
When the tawa is hot enough take a spoonful of batter and spread in circular motion to make uttappam. Size of the uttappam depends upon the batter you have taken to spread.\r
Since we are making uttappam so it should be slightly thick pancakes.\r

To make Spicy Bread Uttappam- Put some chopped green chilly on top and Drizzle oil all around the edges of Bread uttappam.(do not put green chilly while making for kids).\r

After 2 minutes flip it over, drizzle some oil and cook from another side.\r
\r
Cook bread uttappam from both the sides on medium flame till it turns golden brown.\r
\r
Serve Bread Uttappam with coriander chutney, mint chutney, nariyal chutney or any chutney or sauce of your choice. \r

You can serve this Bread Uttappam with sambhar also.\r
