Homemade Roasted Vegetable Tomato Soup | Meatballs : ASMR / Mukbang ( Eating Sounds ) \r

Some of you guys requested a recipe for this soup. so here ya go:\r
\r
Ingredients:\r
\r
1 large onion\r
8 ounces carrots\r
5 ounces potatoes\r
8 ounces celery\r
10 ounces sweet red / orange / yellow peppers, green bell peppers (seeded)\r
6 ounces tomatoes\r
1 can tomato paste\r
½ cup red wine\r
½ tbsp red wine vinegar\r
1 head garlic\r
2 slices ginger\r
3-4 pcs bay leaves\r
1 -2 tablespoon olive oil\r
1 1/2 liters vegetable / beef stock\r
1/2 litre water\r
½ tbsp brown sugar\r
fresh ground black pepper\r
Italian mix spices\r
unsalted butter ( to taste )\r

Directions:\r
\r
1. Preheat the oven to 150°C.\r
2. Chop the peeled vegetables. Cut the carrots, potatoes, celery, bell peppers and onions into nice big chunky pieces (2inch diameter).\r
3. Cut the tomatoes into similar sized chunks.\r
4. In a large heated pan, add olive oil. Then add 1 can of tomato paste to it. Add the ginger slices and throw in all the vegetables (except tomatoes) and add the italian mix spices. Stir-fry until theyre fragrant.\r
5. Transfer the stir-fried vegetables to a baking pan/ tray. Put it in the oven for about 1 1/2 - 2 hours, adding the whole garlic bulb after the first hour. \r
6. Now transfer all the roasted vegetables and the fresh tomatoes to a large pot. Turn on the stove and add ½ cup of red wine. After the alcohol has evaporated. add in the vegetable / beef stock and water. Squeeze the garlic out of their papery husks and add to stock. Add in the bay leaves, brown sugar and red wine vinegar at this point.\r
7. Boil under medium-high heat for 1-1.5 hours. If you want the soup to be more concentrated and flavourful, just keep boiling and reducing the liquid to your desired consistency. Add salt, black pepper, and little bit of unsalted butter to taste.\r

** Ive also added one piece of ox tail (step 6) for some extra flavours. You may add some beef shanks, beef brisket. The measurements of the vegetables are rough estimates since I didnt follow a recipe, you may add more/ less. **\r
