Ingredients:-
4 cups Rice, soaked for 15 minutes
3 tbsp. Oil
2 bay leaves
5 green cardamoms
1 tsp. Cumin seeds
2 onions, sliced
3 green chilies, slit
½ tsp. Turmeric powder
Juice of 1 lemon
1 cup fresh green peas
1 big brinjal chopped into 1” cubes and soaked in water
Salt to taste

Vangi Bhaat Powder:-
10 dry Red Chilies
3 tbsp. Coriander seeds
2 tbsp. Channa dal
1 tsp. Urad Dal
2 tsp. Cumin seeds
1 tsp. Fenugreek
8 cloves
1” cinnamon


Method:-
1. Roast the Vangi Bhaat Powder ingredients in a pan and grind to a fine powder after it cools down to room temperature.
2. Heat oil in a pan and add bay leaves, green cardamoms, cumin seeds, onions and saute until the onions turn pink.
3. Add green chilies, turmeric powder, Vangi Bhaat Powder, green peas, brinjal cubes and mix well.
4. Now add the soaked rice, 8 cups water, juice of a lemon and salt.
5. Mix thoroughly, cover with a lid and cook for 15-20 minutes on medium flame.

Vangi Bhaat is ready to eat!
