Ingredients: (Makes 8)
Unakkapayar / Red cowpeas – ½ cup (Soaked overnight or 7-8 hours)
Water – ¾ cup
Plantain / Banana – 1 big
Grated coconut – 2½ handfuls
Cardamom powder
Sugar – 3 tbsp
Salt - 2 pinches
Ghee / Oil
Maida / All purpose flour - 1½ cup (Or wheat flour)
Steps:
Pressure cook cowpeas adding ¾ cup water for 1 whistle on high flame and for another 10 minutes on low flame.
Evaporate excess water, if any. The cooked mixture should be dry.
Let it cool.
Steam the banana in a steamer / cooker adding 2 cups of water. Place the banana on a base and not directly in the water.
Peel and mash the steamed banana.
Let it cool.
Make a smooth dough out of maida adding some salt.
Cover and let it rest.
Whip the cooked and cooled cowpeas in the mixie for a couple of seconds.
Transfer it to a bowl and add grated coconut, sugar cardamom powder, salt and mashed banana.
Mix well.
Pinch small balls from the dough and flatten it out using a rolling pin.
Spread a few spoons of the filling on to it. (Make sure that the filling is cool)
Roll it from one end to the other.
Cut it into two.
Press together the edges and seal the roll.
Flatten it with your fingers and then lightly with a rolling pin.
Repeat for the rest of the filling.
Heat a tawa and apply some ghee.
Place the snack on the hot tawa and cook on medium heat.
Remove and enjoy the snack.
