that pack an incredible amount of nutrition. Although they are used interchangeably in recipes,
kale holds some significantly higher benefits. Kale contains more than two times
the amount of vitamin C than spinach does. Vitamin C is necessary for the growth
and repair of all body tissues, as well as
the functioning of the immune system. It also contains compounds that are
known to have protective effects against cancer
like sulforaphane and indole-3-carbinol. Sulforaphane has been shown to break down
cancer on a molecular level and indole-3-carbinol

of kidney stones, as about 80 percent
are composed of calcium oxalate. Kale only contains 17 milligrams of oxalate per serving, compared to spinach's 100-900 milligrams.
