It's sometimes said we take the first bite of a dish with our eyes. That's especially true with this recipe which uses a clever visual trick to reveal the true dessert in very surprising way.

You'll need:

- 8.8 oz dark couverture chocolate
- 7 oz butter
- ½ cup sugar
- 3 eggs
- salt
- ½ tsp baking powder
- 1⅕ cups flour
- vanilla ice cream
- caramel sauce
- raspberries and blueberries for decoration

In addition:

- a balloon

Here's how:

1. First melt the couverture chocolate using a bain marie. Blow up the balloon and coat it in the chocolate as shown in the video. Leave the chocolate layer to cool on the balloon for at least one hour.

2. Beat the eggs and sugar in a bowl until they are frothy, then add a pinch of salt, the baking powder and the flour and mix it all together.

3. Then melt the butter and add it in, along with the couverture chocolate. Pour the mixture into a baking tray lined with baking parchment and cook for 25 minutes at 350°F.

4. Cut out a circle of brownie and lay it on a plate, with a scoop of vanilla ice cream on top. Decorate around the brownie with raspberries and blueberries.

5. Pop the balloon and remove it from the chocolate dome you have created. Place the chocolate structure over the brownie with the ice cream. Now, when you pour the warm caramel sauce over the dome, the chocolate will slowly melt, revealing the sweet, secret center inside.
