Daal Tadka is one of the most popular recipes served in Indian restaurants. A mix of 4 types daal. This is a flavourful lentil preparation from Punjab.
Recipe: Ingredients for Boiling Daal: Black Gram Split/Mas Daal-1/4 Cup Whole Mung Beans/Moth Daal-1/4 Cup Chickpeas Split/Chana Daal-1/4 Cup Kidney Beans/Rajma-1/4 Cup Salt-1 tsp Turmeric Powder-1/2 tsp Water-2 Glass water or as required Ingredients For Cooking: Ghee-2 tsp Cinnamon -2 Green Cardamom-2 Cumin-1 tsp Chopped Onion-1Cup Ginger & Green Chilli Paste-3 tsp Salt-1 tsp Turmeric Powder-1/2 tsp Red Chilli Powder-1 tsp Cumin Powder-1 tsp Coriander Powder-1 tsp Garam Masala-1/2 tsp Chopped Tomatoes-1/2 Cup Water-As Required Ingredients For Tadka: Ghee-2 tsp Asafoetida-1 tsp Dried Red Chilli-3 Chopped Garlic-2 tsp Red Chilli Powder-1 tsp
Soak 1/4 cup black gram split/mas daal, whole mung beans/moth daal, chickpeas split/chana daal, kidney beans/rajma one hour before cooking. Add daal into a pressure cooker with 1 tsp salt,1/2 tsp turmeric powder & boil until 8-9 whistles. Keep it aside. Heat ghee in a Kadai. Add cinnamon, green cardamom & cumin seeds to it. Add 1cup chopped onions & fry it until lightly golden. Add 3 tsp ginger-green chilli paste & fry it on low-med heat. Add salt, turmeric powder, cumin powder, coriander powder, red chilli powder,garam masala. Add water as required & keep frying for 2-3 mins. Add 1/2 cup chopped tomatoes & pour water as required. Cover & cook for 5 mins. Add boiled daal,1 tsp salt & warm water as required. For tadka take a pan & add ghee. Add asafoetida, dried red chilli, chopped garlic & red chilli powder into it. Dhaba style dal tadka is ready. Serve it with roti/paratha.
