Ingredients:
Bone marrow: 100g quality beef fillet; 1 piece of quality bone marrow, rendered down to an oil
Lovage oil: 200g fresh lovage; 300ml vegetable oil
Lovage mayo: 2 soft boiled eggs (5 mins from boiling); 250g lovage oil
Pickled chillies: 1 large red chilli; 100g white wine vinegar; 100g sugar; 100g cold water
Soy, chilli & sesame dressing: 1 tbsp soy sauce; 1tbsp sesame oil; 1tsp diced pickled chilli
Plating: Toasted black sesame seeds; Thinly sliced spring onions; Selection of micro dresses
