How to Cook Chicken Breast

00:00 Alright, we're back in the Physique 180 kitchen and as most of you know, chicken breast is
00:11 relatively healthy, high protein, but today we're going to add a little bit of extra flavor
00:15 to it with Chef Big Bob.
00:16 Alright, last time you left us at dinner time, we were doing a spice rub for our pork tenderloin.
00:23 What we're going to do now is we're going to take that same spice rub with the cumin,
00:27 fennel, coriander, and mustard seeds and we're going to add a little extra spice for the
00:33 chicken.
00:34 This is allspice and it's very common in a great Caribbean dish called jerk chicken.
00:38 So we're going to go ahead, not Old Spice, this jar you can buy you a jar of yours, not
00:45 Old Spice but Allspice for jerk chicken.
00:48 Now we'll mix in that allspice through our regular pork spice rub and then we'll apply
00:57 that to the chicken and go through the same process that we went through for the pork,
01:03 sealing it in a plastic bag, putting it in the fridge for a minimum of a half hour, maximum
01:09 about a day.
01:12 Alright, so our chicken is off the grill.
01:14 It's been spice rubbed, fridge for a half hour, put on the grill for about 5 minutes
01:20 aside, 10 minutes total.
01:21 Now we'll let it rest for 10 minutes.
01:22 Now we're going to go ahead and slice in.
01:27 Smells so good.
01:30 Wow, it's juicy.
01:33 Juicy, it's done all the way through.
01:39 Once again we'll bring back our little chimichurri vinaigrette.
01:50 This couldn't be simpler, it's a delicious sauce and it goes with beef, fish, chicken,
01:57 it's really an all purpose condiment, very common in South America.
02:00 So what we have here are some sliced chives, we're going to go ahead and put those in the
02:05 food processor.
02:06 This is a very simple hand held food processor.
02:10 We're going to go ahead and put in our garlic and we also have some fresh mint leaves.
02:14 Smells so good, so good.
02:17 Now some simple red pepper flakes like you might put on your pasta or your pizza, a little
02:26 bit of red wine vinegar.
02:28 Don't eat pizza, we just say what you put on it.
02:31 Alright we're going to go ahead and give this a little whazz after we plug it in.
02:38 Okay so get ready for the whazz.
02:40 Once again, plug, whazz, and go ahead and freshly mint.
02:51 Alright now those are chopped up.
02:53 Now the final part is we drizzle in our olive oil little by little.
02:56 We're going to go ahead and get some olive oil in there, drizzle, drizzle.
03:07 And there you have it, you got a nice beautiful bright green.
03:09 It tastes really good.
