00:11 today i m sharing with you the recipe of bitter gourd and chana dal
00:16 ingredients we need are
00:19 1 1/4 cup chana dal which i soaked for 2,3 hours and boiled it
00:29 1/2 kg bitter gourd which i cut in thin slices
00:39 its almost 1/4 inch in size
00:42 2 large size onion which i sliced
00:52 dont boil it,just make it soft and it will be more tasty if it is kept in room temperature.
01:00 i have kept it in thick slices.
01:04 4 medium size tomatoes which i peeled and chopped.
01:10 2,3 tbsp coriander leaves
01:17 1 inch ginger piece
01:22 6,7 green chillies
01:25 1 tbsp garlic paste
01:32 1 tbsp salt because i boiled it without salt
01:39 1 tbsp cumin seeds
01:42 1/2 tsp cumin powder
01:47 1/2 tsp turmeric
01:50 1 tsp red chilli powder
01:55 1 tsp crushed red chillies or chilli flakes
02:00 adjust it as per your taste
02:03 i use eva canola oil which is light and refined
02:08 i use 1 1/2 cup oil
02:12 we can adjust it but we will use more oil because we will fry the bitter gourd.
02:19 i keep oil in a pan to heat up.
02:24 first we will fry the bitter gourd in it.
02:29 after frying the bitter gourd,it will become pink in colour.
02:58 now we need to fry it just a little bit.
03:03 so i take it out in a plate.
03:07 oil is hot now.
03:23 in the same oil i will add onions.
03:28 we need to fry it till it becomes soft.
03:39 we keep it thick because we will add onions in it when we fry the tomatoes and bitter gourd.
03:53 i like thick onions so i cut it thick.
03:57 if you don,t like thick onions you can cut it thin.
04:06 now we add tomatoes in it.
04:10,add all the spices in it.
04:29 add salt,cumin powder,turmeric and cumin powder.,red chilli powder and red chilli powder.,and mix it well.
04:59 now we cook it for 2 minutes.
05:03 add 1/2 glass water in it.
05:14 cover it and cook it on medium flame.
05:18 to make the gravy and tomatoes soft.
05:23 add chana dal in it.and cook it for 2 minutes.then add bitter gourd in it.
05:50 add 1 glass water in it.
05:54 i give you a tip to cook bitter gourd in open pan and not in lid.
06:03 and if you add water in it before cooking it it will be bitter.so add water in it first and then add bitter gourd.
06:17 water is boiling now so i add bitter gourd in it.
06:22 i have kept the quantity of bitter gourd half of chana dal because most of the people don,t like bitter gourd.
06:32 but if you like bitter gourd you can use 750 gms of bitter gourd instead of 1/2 kg.
06:40 but i think this quantity is enough for me.
06:46 now i cook it on medium flame till it gets completely cooked.
06:54 add ginger in it.
07:00 and 4,5 green chillies.
07:05 i add whole green chillies because they are spicy.
07:10,and 1/2 tsp turmeric powder.
07:12 chana dal and bitter gourd gravy is ready now.
07:27 add 1 tsp garam masala in it.it is optional.it will enhance the taste and aroma of the dish.you can skip it if you want.
07:46 add cilantro in it.
07:50 mix it well and turn off the flame.
08:00 our delicious bitter gourd chana dal is ready now.
