00:26 Today we are going to see how to prepare Bhel or Bhel.
00:30 This is a very very very popular Indian street food.
00:33 This is basically a combination or mixture of puffed rice i.e. Murmura, all types of different sevs, salty peanuts, all types of different fried lentils
00:44 which is tossed with some tangy and yummy tamarind sauce or chutney.
00:50 It tastes just yummy. So let's do it.
00:54 And to get started first we are going to make tamarind chutney or tamarind sauce.
01:02 Now this is the basic sauce or chutney that is a kind of must to prepare any kind of Indian chaat.
01:08 Now here I have taken quarter cup of tamarind.
01:12 This tamarind I have soaked in a cup of water for just about half an hour.
01:18 Now in this I am going to add jaggery. This is about 3 tbsp of jaggery.
01:24 Stir this around.
01:28 And now we are going to cook this jaggery and tamarind together over medium heat for just about 5 to 6 minutes.
01:37 Right till the time this jaggery melts down.
01:40 Well now here I have cooked this tamarind and cooked together for just about 5 minutes.
01:45 And just give it a stir.
01:49 And you can see this mixture has come to a boil and all the jaggery has been melted properly.
01:57 And now we need to wait right till the time this mixture becomes cool.
02:02 Now in India whenever they serve this phal they always ask that whether we want it spicy, medium spicy or just sweet.
02:11 Now to add that extra punch or kick in this phal what they do they add some basic green chilli chutney in it.
02:19 So now we will see how to prepare that chutney.
02:22 For that what here I have got is lots of green chillies.
02:27 Also here I have just half clove of garlic and just a small piece of ginger.
02:34 Make use of very little ginger and garlic because we don't want to overpower the taste of this green chutney with this garlic and ginger.
02:43 Now mix this everything together into a blender.
02:50 And also we need to add some salt just a little bit for taste.
02:59 Now just cover this up.
03:01 You can make any type of variation in this basic green chutney.
03:05 You can add some mint leaves or even some coriander leaves, lemon juice and just grind this everything together.
03:17 And now here my spicy chutney is all ready.
03:20 Now also this tamarind pulp has cooled down completely.
03:24 Now next what we gonna do just take a potato masher and just mash it.
03:30 What we basically want is just to squeeze out all pulp from this tamarind.
03:35 So if you don't have this potato masher you can just squeeze this using hand.
03:41 And once we mash this up really well.
03:43 Now next what we gonna do just take any strainer and pour this tamarind chutney over it.
03:58 And we gonna just strain this out.
04:04 Take a spoon and just strain this out.
04:10 And after we strain out all juices from this tamarind.
04:13 Now you can see here we have got this nice and thick tamarind chutney or sauce.
04:21 Looks fabulous.
04:24 And we gonna season this up with some dry spices.
04:28 First I am gonna add some red chilli powder.
04:34 Just a little bit.
04:36 Also here I have some chaat masala.
04:44 And of course some salt to taste.
04:50 Now just stir this around.
04:57 And now this tamarind chutney or sauce is ready.
05:01 This chaat masala adds really nice flavour in it.
05:04 Wow. Smells and tastes so yummy.
05:08 Just awesome.
05:11 Our all type of sauce is ready.
05:13 Now let's start to make bhel.
05:16 Now India they use this type of pot to prepare bhel.
05:20 Now here I have taken some pulp rice or murmura in it.
05:24 And now in this murmura I am gonna add some farsan or hot mix.
05:30 You will find this easily at any Indian grocery store.
05:33 This is basically combination of all kind of sev, peanuts, lentils.
05:40 Add in as much or as less you want.
05:46 Also I am gonna add some thin sev or plain sev.
05:55 Next add in some chopped onion.
06:02 Also I have some chopped tomatoes.
06:11 And this spicy chutney.
06:17 Now you can add it as much as more or less depending on how spicy you want.
06:22 But I like my bhel really very spicy.
06:25 I am gonna add lot of this green chutney.
06:36 Also add in chopped coriander leaves.
06:40 And now just mix this everything together really well.
06:44 You have to be really very quick.
06:49 And next add in some this tamarind chutney.
06:54 Now at this point of time add just a little bit of chutney.
06:58 We are gonna top our bhel with this tamarind sauce.
07:02 So add in just a teaspoon, 1-2 teaspoon.
07:06 Mix this up.
07:09 Smells fabulous.
07:11 Also squeeze in some lemon juice.
07:18 And mix this up.
07:22 And now I am gonna transfer this into serving plate.
07:25 And let's see how to serve this bhel.

07:36 Now this is also a unique way to serve this bhel.
07:40 What we gonna do.
07:42 Again I am gonna add some chopped onion on the top of it.
07:46 Just a little bit.
07:53 Some chopped tomatoes.
08:00 Then add this farsan.
08:06 Also add in some sev.
08:10 Looks so good.

08:22 Wow. And now this bhel is all ready.
