00:00 Welcome to BenjamanTV and today we're going to be talking about stir fry.
00:04 Yes, the delicious Chinese influenced dish that anybody can enjoy.
00:09 Why I love it, number one, it's healthy, two, it's easy, and three, anybody can really do
00:15 it.
00:16 You don't have to have any special tools for it, but we'll go right into the ingredients.
00:20 We got our garlic right here, our red chili flakes, and we've got ginger, some red chili
00:25 paste, teriyaki sauce, onions, got some salt and pepper right here, and then we go into
00:31 the meats and vegetables.
00:33 Today it's really simple, we've got ourselves some grass fed organic beef, and we've got
00:39 some French green beans.
00:42 Try to keep it to a minimum with stir fry, you want to keep it nice and simple.
00:46 Another note, take a look at all the ingredients, main ingredients, they're all kind of the
00:50 same size.
00:52 That's going to be really important when you're cooking stir fry because you want everything
00:55 to kind of cook evenly.
00:57 Another really good tip about cooking stir fry is having all your ingredients ready before
01:02 you even start cooking.
01:04 Why is that?
01:05 Stir fry is meant to be cooked at a really high heat and it's supposed to be really quick.
01:10 If you're cooking stir fry, you can really use any kind of frying pan, but I always suggest
01:14 using a wok, obviously this is what you see at the Chinese restaurants.
01:19 So let's go ahead and get started.
01:20 Alright, you're going to start off with a gas burner, if you have electric that works
01:24 fine, but go ahead and start off on low heat, get that pan heated up.
01:29 You're going to marinate the oil in some garlic, the ginger, as well as the red chili flakes.
01:36 With oil, you can use any oil except olive oils because olive oils tend to smoke quicker
01:42 and you're going to be doing this on high heat.
01:44 Go ahead and flavor that oil for a little bit.
01:47 We've got about 6 tablespoons of oil.
01:50 Once that oil is flavored, you're going to actually take out all those chunks of garlic,
01:55 ginger, and as many of those red chili flakes as possible.
01:58 You're going to put it into a little bowl and you're going to save it for later.
02:02 Go ahead and leave in about 3 tablespoons of oil and you're going to save the rest for
02:06 later.
02:07 Alright, get that heat on high, okay, this is where the actual frying comes in.
02:12 Get that pan nice and hot and add in your beef.
02:15 Go ahead and let that beef sit for about 30 seconds and let it brown.
02:20 While you're doing that, add in the pepper, salt.
02:24 After about 15-20 seconds, you're going to go ahead and stir that.
02:29 See all that browning?
02:30 That's the good stuff right there.
02:32 Oh yeah.
02:34 Next you're going to go ahead and move that meat.
02:37 It's about medium done and that's going to be okay.
02:40 You're going to finish cooking it later.
02:41 Go ahead and put that to the side.
02:44 Get that heat back on high and add that leftover oil you had from the marinating oil from before.
02:50 Go ahead and add that in there.
02:52 Get that pan nice and hot.
02:54 Now you're going to add in the green beans.
02:56 Go ahead and stir fry that for about 15-20 seconds.
02:59 Now the green beans are going to be kind of hard so you want to add in some water and
03:04 cover it up.
03:05 And what you're doing is you're steaming those vegetables.
03:08 That's going to be for about 15-30 seconds, depending on how hard you want those.
03:13 Go ahead and uncover that.
03:14 All that water should be gone.
03:16 Now you're going to add in the onions and then the rest of those bits and pieces of
03:20 garlic and red chili flakes.
03:22 Oh yeah.
03:23 Oh yeah.
03:24 That's good.
03:25 That's going to be for about 30 seconds and then you're going to add in your meat.
03:30 Now you're going to add in the flavor, the red chili paste as well as the teriyaki sauce.
03:35 At this point you're pretty much done.
03:37 Make sure you have it on a high heat.
03:38 You're going to continue to stir fry for about 30 seconds.
03:42 If you want, add in some sriracha for some extra heat.
03:45 Finish it off by mixing it real good.
03:48 Alright, there we go.
03:50 We just cooked our stir fry.
03:51 It looks beautiful, succulent.
03:54 Vegetables are still a little firm so you know they're kind of fresh.
03:57 Meat's cooked perfectly.
03:59 With stir fry you want to go ahead and serve it right away.
04:02 One of the key tips for stir fry is make sure you always cook a maximum amount of two servings.
04:11 You don't want to overcrowd the wok.
