00:03 Halibut, it's a wonderful fish.
00:08 I love cooking with it.
00:09 It's very robust, but it's got this really
00:10 nice snowflake appearance.
00:12 It's bright white, full of flavor, and packed with protein.

00:17 Hold it towards the tail, and just tug the tail.

00:24 All you do now is just cut nice, big, thick slabs of halibut.
00:29 Into the fridge to firm up.
00:31 Now, we're going to make this really amazing fresh tandoori
00:34 paste, starting off with some ginger, garlic, cumin,
00:37 coriander seeds, and the spices here.
00:39 We've got chili, turmeric, paprika, and garam masala.
00:42 Basically, a hot, warm spice.
00:45 Roast seeds, salt. And that sort of intensifies the flavor.
00:50 Take a small knob of ginger, anti-Royal Thompson-sized knob.
00:54 Peel.
00:55 Grate that ginger into the pestle and mortar.
00:58 Three cloves of garlic.
01:01 Toasted seeds in.
01:03 Salt, spice, lemon.
01:08 That starts to turn the paste into a really nice, sharp,
01:10 vibrant, fresh flavor, which you never get
01:13 when you buy a tandoori paste.
01:15 Tomato puree.
01:17 And then a couple of tablespoons of groundnut oil.
01:20 Mix.
01:21 The color is extraordinary.
01:23 You don't get that color when you buy a paste.
01:25 Done.
01:26 Absolutely beautiful.
01:27 Marinate in the halibut.
01:28 Yogurt, paste, lemon, sugar.
01:33 Just to sort of chill the flavor of the heat with all the spices.
01:37 Mix.
01:38 Look at that color now.
01:39 Beautiful.
01:40 Halibut.
01:42 In it goes.
01:42 Spoon the marinade over the halibut.
01:45 Hot pan.
01:47 Groundnut oil.
01:48 Straight into the pan.
01:50 Leave that cooking nice and gently for about 2 and 1/2,
01:53 3 minutes each side.
01:56 We're going to serve it on a bed of cucumber.
