00:35 And to celebrate this momentous occasion, what else could I make but a Double Rainbow
00:41 Cake?
00:42 So let's get baking!
00:43 This recipe is actually a throwback to the very first episode that we did here on Bigger
00:47 Bolder Baking and that was for Marbled Rainbow Cake.
00:50 But today we're going to jazz up this already amazing cake and create a double rainbow effect.
00:55 The cake that we're using is my master recipe for yellow cake.
00:58 In a large bowl, we're going to add in our flour, white sugar, brown sugar, baking powder,
01:05 baking soda and salt.
01:08 And then whisk all these ingredients together.
01:09 When I bake, you will always see me weigh out my dry ingredients, weigh out my wet ingredients
01:13 and then mix both of them together because you get so much better results when it comes
01:17 to baking.
01:18 Now in a separate jug, we're going to add in our buttermilk, yogurt or sour cream, eggs
01:23 and vanilla extract.
01:25 And then whisk all these together.
01:26 I know buttermilk is hard to find in some countries so I'm going to put a recipe in
01:30 the description box below this video of how you can make your own buttermilk along with
01:33 measurements for the rainbow cake and the method.
01:36 Before you add your wet ingredients into your dry, you want to melt your butter so it's
01:39 at room temperature before you use it because if it's too hot, it actually will set on your
01:43 mix.
01:44 So to mix your cake, add all your wet into your dry ingredients and then gently mix together.
01:49 As you can see, it's a really thick cake mix but once you get the flour nice and wet but
01:52 not fully mixed, now we add in the butter.
01:55 This is such a lovely moist cake and the one thing you don't want to do is over mix it
02:00 because it will actually end up quite tough.
02:02 So just gently fold all your ingredients together and then stop.
02:05 Now that we have our cake batter made, we're going to divide this mix between 6 bowls evenly
02:09 and color it.
02:10 Just add a little food dye to your batter.
02:12 Give it a mix and then add more until you get your desired color.
02:15 I'm making red, orange, yellow, green, blue and purple.
02:22 All the colors of the rainbow.
02:23 Ok, so now that we have our cake batter colored, we're going to start to build our marble rainbow
02:27 cake.
02:28 And the thing I love about this is that you never get the same cake.
02:31 You always get a unique, different cake every time.
02:34 For my cake, I'm using a 6-inch tin because I want it to be narrow and high so I buttered
02:38 and lined this one but the recipe actually makes an 8 or a 9-inch cake.
02:42 Just lay all of your beautiful colors one in on top of the other.
02:46 There's no rhyme or reason to how I'm doing this.
02:48 We just want to create a beautiful marbled effect with all the different colors.
02:53 One tip is to use small spoonfuls so you get lots of different color.
02:56 And then just keep on building up your colors.
02:59 Just imagine once you cut into this cake what it's going to look like.
03:02 You will never get the same result twice.
03:04 This rainbow cake looks gorgeous and it's ready for the oven.
03:07 Bake your rainbow cake at 350 degrees for 45-55 minutes or until it's firm in the middle.
03:13 While your cake is baking, it's a good idea to make your buttercream.
03:15 Now I've made this in a previous video for Funfetti Celebration Cake and I'm going to

03:21 This is my master recipe for buttercream so I know you'll love it.
03:24 So to truly make this a double rainbow cake, we're going to color our frosting just like
03:28 we did our cake batter to create a beautiful rainbow effect around the outside.
03:32 You want to divide it up into 6 bowls and color it just like you did before.
03:36 The best thing about making your own rainbow cake is that you can do any colors you like.
03:39 You don't have to do the ones that I did.
03:41 I'm going to set these bowls aside until we're ready to frost our cake.

04:14 Our timer's gone off so let's check on our cake.
04:17 Our cake is done and it looks and smells amazing.
04:20 You can see all the beautiful color on the top that we created.
04:24 I'm going to set this guy aside and let it go totally cold and then we'll be able to
04:27 frost it.
04:28 One of my favorite parts of making this cake is getting to slice into it and seeing the
04:31 beautiful marble effect that we created.
04:33 I made this cake yesterday so it was ready in time to frost today.
04:36 I'm going to cut around 5-6 layers into this cake depending on how much I can get because
04:40 I want to give it really good height.
04:42 Now let's see what it looks like on the inside.
04:45 Gorgeous.
04:48 Look at that.
04:49 It's so pretty.
04:50 Put that aside and then cut out another layer.
04:53 This is what I meant about each cake being unique and different.
04:55 This layer is so different to this one but they're both really beautiful.
04:59 Now just keep cutting all of your thin layers.
05:01 I'm doing mine freeform and they're turning out really great.
05:04 I'm going to cut off this bump on the top of the cake because I want to create a nice
05:08 flat surface because this is actually going to end up being the bottom of our cake.
05:12 I can't believe how vibrant these colors are and it smells lovely.
05:15 Our next step is to frost the layers with the rainbow frosting we already made.
05:19 The bottom layer of my cake is actually going to be my top and that's why we leveled it
05:23 off so it was nice and flat.
05:25 So we're going to turn this over and we're going to put some purple icing on this and
05:28 we're going to work our way up to the red.
05:30 Now I actually have a little turntable to put my icing on but if you don't, don't worry
05:35 about it.
05:36 It's not essential.
05:37 Lay your next layer on.
05:39 Try and lay your layers on even.
05:41 I know it's kind of hard.
05:43 And go with your next color of frosting.
05:45 And then continue with your next layers and all your other colors of frosting.
05:49 Just look at the contrast of these colors.
05:51 It is just unreal.
05:53 This has to be like the ultimate celebration cake.
05:56 The frosting in the middle also keeps the cake moist and it gives it more flavor in
05:59 every bite.
06:00 And then on with the final layer.
06:02 At this point, you want to make sure the cake is nice and straight.
06:04 I'm going to finish off the top with red as well because the final cake will have red
06:09 on the top.
06:10 What I'm doing now is actually creating the crumb layer.
06:13 Run your spatula along the side and you're going to unearth some loose crumbs and as
06:17 you can see, you're already getting a gorgeous rainbow.
06:20 You can see what it's going to look like.
06:21 Look at that.
06:22 Wow.
06:23 What a pretty spatula.
06:26 Also when we go to frost it properly, we'll be able to tell what colors we're doing where.
06:30 I know this might look messy now but when we're finished icing it, it is going to look
06:33 amazing.
06:34 Now that we've done our crumb layer, I'm going to put this cake in the fridge for around
06:37 15 minutes or so and let this icing set so it will be much easier to decorate on top
06:41 of it.
06:42 Now that our crumb layer is set, we're going to decorate our cake to give it that double
06:45 rainbow effect.
06:46 We're going to decorate our cake from the bottom all the way to the top, creating an
06:50 ombre effect of rainbow layers.
06:52 With a small spatula, do thin layers of all your colors and don't worry if it's messy,
06:57 if there's little holes.
06:58 We're going to fix all of that in the end because this is a rustic looking cake and
07:02 you know what?
07:03 The messier, the better.
07:04 The beauty of creating an ombre effect is that when the colors marry together, they
07:06 look gorgeous.
07:07 And it's like it's the way they're meant to be.
07:09 Run your spatula flat along the sides of the cake and you'll see the beautiful rainbow
07:13 colors blend together.
07:15 Don't worry if you missed a spot because you can go back over it with icing.
07:18 This cake looks gorgeous but you have to see the inside to get the full effect.
07:22 Use a serrated knife to cut a big piece.
07:24 And then behold your amazing cake.
07:26 It is so bright and vivid.
07:28 It's a double rainbow cake all the way.
07:30 This rainbow cake is perfect for any celebration but especially when you're one year bolder.
