00:04 >> All right guys, the burger episode of Cravings was really good.
00:07 We had really good feedback.
00:08 I think we should do pizza next.
00:10 What do you all think?
00:10 >> You know, pizza works, man.
00:12 Pizza's a good one.
00:13 >> Good job.
00:14 >> Did somebody say pizza?
00:15 [MUSIC]
00:18 >> Who are you?
00:19 [MUSIC]
00:21 >> When was pizza invented?
00:23 >> Hold on, hold on.
00:24 I think you have the wrong shoe.
00:26 >> What?
00:27 What is this?
00:27 >> This is Cravings.
00:29 [MUSIC]
00:39 >> What's Cravings?
00:48 >> This is where we have fun with food.
00:49 >> I like the sound of that.
00:51 I really like food.
00:52 >> Today we're discussing pizza.
00:54 >> Pizza?
00:55 I love pizza.
00:56 I go to La Cantina, Cava is pretty good.
01:00 Have you all been to- >> Hold up, hold up, please, all right?
01:02 What about the local favorites, man?
01:04 The real pizza, the Marios, the Jews, the Pizza Boy.
01:08 >> I bet you, if we do a competition, I know local pizza better than you.
01:12 >> Please, please, local pizza nothing, all right?
01:14 I will school you in local pizza.
01:17 >> Samson's on my team.
01:18 >> You have Samson, I'm with you.
01:19 >> Let's go.
01:20 >> All right, let's do this.
01:22 >> Yeah, I'll go get the pizza.
01:23 >> Pizza.
01:24 >> But you'll have to be blindfolded.
01:27 >> Blindfolded.
01:28 >> It's fine, it's fine.
01:29 >> Go ahead and blindfold us.
01:30 [MUSIC]
01:40 >> Okay guys, you're gonna be sampling five pizzas.
01:43 They are Pizza Boys, Jews, Marios, Dominos, and Papa John's.
01:48 >> So what did you just eat, then?
01:50 We need to talk about pizza.
01:52 >> Trying to get that piece that makes a big person-
01:55 >> No, you promised, it's just like-
01:56 >> No, no, shut the hell up.
01:58 >> Okay, who's ready to deliberate?
02:00 >> Me.
02:00 >> We have decided that this is more than likely or probably Pizza Boys.
02:06 >> Pizza Boys.
02:06 >> Yeah.
02:08 >> All right, Nair and I, after some deliberations,
02:11 have agreed that this must be a Domino's pizza.
02:14 >> That's Pizza Domino's.
02:16 >> Next.
02:17 >> Okay. >> You be quiet over there, okay?
02:19 >> Next pizza, do we start?
02:21 >> Yeah, you got to go, all right.
02:23 >> I'm doing one of them for the sheets.
02:26 >> Okay, we're ready.
02:27 >> I didn't know.
02:29 >> Go, Marie.
02:31 >> We think it's Pizza Boys again.
02:32 >> Pizza Boys.
02:33 >> [LAUGH]
02:39 >> This is really Pizza Boys.
02:40 >> Yeah, we're pretty sure.
02:42 >> Sean, what do you think it is?
02:44 >> This is Pizza Boys.
02:45 I think that for once, Marie has it right.
02:47 >> All right, say pizza.
02:48 >> Yes, sir.
02:49 >> Okay.
02:50 >> Here's your other one.
02:52 >> You have it?
02:53 Good.
02:53 >> I know what it is.
02:55 >> This is- >> Yeah.
02:57 >> Okay, we're ready.
02:59 >> This is easy.
03:00 This is so easy.
03:01 >> This is Joe's Pizza.
03:02 >> Absolutely.
03:03 Sorry, that's all I have to as well.
03:04 >> All right, fine.
03:05 We agree.
03:07 >> Why is it Joe's Pizza, Marie?
03:09 >> The sauce, Joe's Pizza has a very distinct sauce and
03:13 cheese combination, and I can taste their sauce.
03:15 It's very tangy.
03:17 >> That's right.
03:18 >> No, I pretty agree, Marie.
03:19 >> It's good, I like that.
03:20 >> The sauce is a dead thing.
03:21 >> I'm gonna take another bite.
03:22 >> So four seconds, the last one.
03:24 >> Okay.
03:25 >> You got your slice?
03:26 >> Here I go.
03:26 >> All right.
03:29 >> This is really kind of pizza fun, you know, Sean?
03:31 >> It is.
03:31 That's what we're all about.
03:33 We're about fun with food.
03:34 >> We think it's Mario's.
03:36 >> I would have to say Domino's.
03:40 >> But we said Domino's already.
03:41 >> Easy.
03:42 >> You need to tell them.
03:43 You need to, you know?
03:44 >> We may have made a mistake.
03:46 >> No, we're premature the first time around.
03:50 I might not tell me when I'm wrong, and this I think is Domino's.
03:55 Have yours on.
03:56 >> Okay guys, last one.
03:59 Last one now, Sean.
04:00 >> Here we go.
04:01 >> This is it.
04:02 We got it.
04:03 Samson, are you sure?
04:05 >> I don't like it.
04:07 >> Okay, we got it?
04:09 Okay, I got a huge slice.
04:12 >> This is really meaty.
04:13 >> Wait.
04:14 I'm just gonna put that there.
04:16 All right.
04:17 >> Pizza.
04:19 >> No.
04:19 >> I don't know.
04:21 >> I mean, let me tell you what it is.
04:23 >> What is it?
04:25 >> Mario's, Doppel's, Domino's.
04:26 >> Those bastards.
04:27 >> Papa John's.
04:28 >> Give me part something that I can eat.
04:30 >> Papa John's.
04:31 >> Papa John's.
04:33 >> Papa John's.
04:34 >> You know, the viewers can't see, but you all can't see.
04:38 >> What am I doing wrong?
04:39 >> We believe.
04:40 >> Okay.
04:41 >> We both believe that this is Papa John's.
04:44 >> We think this is Mario's.
04:48 >> You don't know Mario's.
04:50 You all know Mario's, you think this is Mario's.
04:52 >> This is Mario's.
04:53 >> Nope.
04:54 >> Mm-hm.
04:54 >> No.
04:56 >> I promise you.
04:57 >> This is Mario's.
04:57 >> Yep.
04:59 >> Yep.
04:59 >> No problem.
05:00 No problem.
05:01 >> But it's so fat, it's not Mario's.
05:03 >> I have never led Samson astray.
05:05 >> I have a different recollection personally.
05:08 But teacher's own, I guess.
05:09 Remember things differently.
05:11 >> I would never do such a thing.
05:12 >> Samson never forget.
05:13 >> Let's put on that one now.
05:14 >> Never forget Samson.
05:15 >> Let's open that door.
05:17 >> All right.
05:17 >> It's me and it's Mario's.
05:19 >> Yes. >> No problem.
05:19 You guys are free to be wrong.
05:21 Nothing wrong with that.
05:22 You see right?
05:23 >> Are we done?
05:24 So now that we've done this competition and
05:26 we've established who the real local pizza winner is.
05:29 >> Thank you very much.
05:29 We got this.
05:30 Thank you.
05:31 >> Why don't I take you to some of those establishments I spoke about earlier?
05:35 >> I'm ready.
05:36 >> You ready?
05:36 >> Let's do this.
05:37 >> All right, let's go.
05:37 [MUSIC]
05:41 >> Samson, I can't do this.
05:42 I'm sorry, buddy.
05:43 >> It's okay.
05:44 It's okay.
05:44 I can do this.
05:45 >> [MUSIC]
05:55 [MUSIC]
06:05 >> How are you doing?
06:17 >> Very good.
06:17 >> So Sean and I- >> How are you doing?
06:19 >> I'm a seat my friend.
06:20 >> How are you doing?
06:21 >> Good, good.
06:21 >> How are you doing?
06:23 >> Very good.
06:24 >> Okay, so Sean and I were discussing pizza commandments.
06:28 Do's and don'ts.
06:29 >> That's right.
06:29 >> Okay. >> What are the professional-
06:32 >> Depends what you like in the pizza.
06:34 There's many different topping we have.
06:37 And it's up to you.
06:39 It's your choice.
06:41 >> You know, but are there certain things that you would tell people to do or
06:44 not do with pizza?
06:45 So like a knife and fork.
06:47 Is it okay to eat pizza with a knife and fork?
06:48 >> No, for me it's better with a knife.
06:51 >> Thank you very much, Claudio.
06:52 >> For me it's better with a knife.
06:53 >> And what about condiments on a pizza?
06:54 A little bit of ketchup, a little bit of mustard, some garlic sauce.
06:57 >> No, not ketchup, man.
06:58 No ketchup, man.
06:59 Just like that.
07:00 Just like that.
07:01 >> A little pepper.
07:02 >> Maybe some spices, some chili flakes.
07:05 >> Yeah.
07:06 >> And that's all.
07:07 For me. >> Fruit.
07:07 >> Fruit for Trinidadian fruit.
07:11 [LAUGH]
07:12 >> What about for Claudio?
07:14 >> For me, no.
07:15 >> Talk about Claudio.
07:16 >> All right, let's go to the kitchen.
07:17 >> Yeah.
07:18 >> There we go.
07:18 >> Let's make this up with Claudio.
07:19 [MUSIC]
07:21 >> This pizza is a bufalina.
07:23 >> Oh, bufalina.
07:23 >> Okay.
07:25 >> It's buffalo cheese.
07:26 >> Nice. >> Fresh buffalo cheese.
07:27 >> And what is buffalo cheese, Claudio?
07:29 >> Buffalo cheese is the cheese that comes from the buffalo,
07:32 the meat from buffalo.
07:34 >> Really?
07:35 >> Yeah.
07:36 >> Wow.
07:36 >> It's not buffalo sauce on cheese, is that right?
07:38 >> No.
07:39 >> Okay, that's what I thought for a moment.
07:40 >> Okay, just clarifying that short.
07:42 This dough has been resting here for 48 hours.
07:44 >> Okay. >> So apparently the key to a good
07:46 pizza is the dough.
07:47 Much like fine wine, you know, it needs more time to ferment.
07:52 >> Yes, indeed.
07:52 >> Indeed.
07:53 >> Indeed.
07:53 Here goes the magic.
07:56 >> Nice.
07:57 >> Very good.
07:58 >> Timing.
07:58 >> I see the cross beginning to blacken ever so slightly.
08:03 [MUSIC]
08:13 >> Make some space.
08:23 >> And voila.
08:35 >> Ready?
08:35 >> Bon appetito.
08:36 >> Wait, first the peas.
08:38 >> Okay, so you get tiny peas.
08:39 >> Aw, you get too sweet.
08:40 >> Right there, and I will take.
08:42 >> That's all you.
08:43 >> This right here.
08:44 Okay, let's go.
08:45 >> I feel inadequate for some reason.
08:47 >> Really?
08:48 >> There's something wrong here.
08:49 >> Size doesn't matter.
08:50 Let's go.
08:51 Ready?
08:51 >> Yeah.
08:52 First thing I get is the prosciutto parma.
08:59 >> Mm.
09:00 >> And then after that, I get that creaminess of the cheese.
09:04 And most importantly, the crunch from the crust and the arugula.
09:07 >> It has the perfect amount of salt.
09:09 I just like that.
09:11 >> Sauce has a nice little sweet taste.
09:14 That cheese compliments it so well.
09:16 >> Absolutely, and it's not too saucy.
09:18 This is a pizza that does not require ketchup or mustard, all right?
09:23 >> Please, I like this.
09:26 >> This is perfect.
09:27 >> Everything okay?
09:28 How are we doing?
09:28 >> The world's most perfect pizza, my friend.
09:30 >> It's really good.
09:32 >> Enjoy yourself.
09:33 >> It's getting better with every bite.
09:35 >> It is, actually.
09:35 >> Are you guys jealous?
09:38 >> Oh, that buffalo mozzarella is actually really good.
09:44 >> I could die.
09:46 I want a pizza, how much?
09:47 >> Baco was something that was unique, different in this part of the island.
09:53 Because, of course, everybody's accustomed to have places like this in town,
09:58 in Porto, Spain, or in the West.
10:00 So I think it was a nice idea to bring Baco and
10:03 to bring a traditional Italian pizza down in the South.
10:08 >> Baco Pizza, it's a real Italian pizza,
10:12 exactly on the other side of the world.
10:15 I mean, in Trinidad, I found a pizza restaurant
10:20 where I can eat the pizza exactly like I did in Italy.
10:24 >> The satisfaction is to see the clientele come back over and
10:27 over and getting the good feedback from our clients.
10:30 [MUSIC]
10:40 >> So we couldn't do a pizza episode without coming to La Cantina.
10:46 >> Everything about La Cantina is very family oriented.
10:49 It's so fitting that we're in a family home.
10:51 This was once a property owned by the Seagate family.
10:53 I mean, this property dates over 120 years old.
10:56 Based on that tradition and everything, we felt a fitting spot to do La Cantina,
11:00 because even our metal production, our preparation for
11:02 our pizza is very much authentic, traditional Italian.
11:07 La Cantina really means quite something.
11:09 It's the corner shop, the store, the canteen.
11:11 It's all different, up to all different interpretations.
11:14 We just like to think of it as home for us.
11:16 [MUSIC]
11:26 >> So who is this friend that we're meeting here tonight?
11:34 >> Uh-huh, now that's a surprise.
11:36 >> Really? >> Yep.
11:37 >> Okay, is he famous?
11:40 >> More famous-ish.
11:41 >> Like Beyonce famous, or like that bar tab chick famous?
11:45 >> Definitely more famous than the bar tab chick.
11:47 >> Really? >> Not quite Beyonce.
11:49 Who cares?
11:49 >> God, it's hilarious.
11:52 >> That my boy.
11:54 >> Welcome to Pizza Land.
11:55 >> So where you love to eat, you gotta be in plenty of places, boss.
11:57 >> It's called La Cantina.
12:00 >> La Cantina, what is this, your favorite pizza?
12:02 >> They have some good.
12:04 Quattro.
12:06 This is a thin crust pizza.
12:07 Now this pizza comes with pepperoni, bacon, minced beef, and ham.
12:12 Plenty of meat.
12:13 Four meats.
12:14 >> Four meats, right.
12:15 >> That's Marie's kind of pizza.
12:15 >> Sorry, that was your German way.
12:16 Four meats.
12:17 >> Marie's all about that meat, man.
12:18 Trust me.
12:19 >> But the meat and the batter and everything, that's some shandy.
12:21 Let's get some shandy.
12:22 >> That's right, the good stuff, man.
12:24 >> All right, let's go.
12:26 >> Let's do it.
12:28 >> So you're sure I can't use my knife and fork?
12:34 >> I'm pretty sure you can't.
12:38 All right.
12:39 >> Fine, let's do it.
12:40 We pizza chairs.
12:41 >> All right, pizza chairs, man, that's our custom.
12:45 >> Ready?
12:45 >> I'm pretty sure you can't.
12:47 All right.
12:48 >> Fine, let's do it.
12:50 We pizza chairs.
12:50 >> All right, pizza chairs, man, that's our custom.
12:52 >> Ready?
12:53 >> Pizza chairs.
12:54 >> Cheers.
12:55 >> Cheers.
12:56 >> Let's do that.
12:56 [MUSIC]
13:03 >> You know what?
13:04 I love that they don't, they're not stingy with the amount of meat they put on this
13:08 pizza.
13:09 I think I got all the meats in the first bite.
13:11 >> So tonight, in one bite, they get everything.
13:12 But more importantly, what I like about it is the sauce.
13:14 The sauce is a bit tangy, you're getting the tartness and
13:17 sweetness from the tomatoes.
13:18 A real best sauce.
13:19 >> What I love about it is, hey,
13:21 it's not too heavy.
13:22 >> Or you like tendons.
13:23 >> [LAUGH]
13:25 >> Sorry that I'm falling,
13:26 you all can't have that, right?
13:27 >> Everybody knows that, all right?
13:28 The man served with the white cheese, eh?
13:30 >> Yeah, boy.
13:30 >> Give me some of that white, boss.
13:31 >> Welcome to my home.
13:33 >> [LAUGH]
13:34 [MUSIC]
13:44 >> Check in, I'll start with the salmon.
14:02 >> And I'll start with the lamb.
14:03 >> All right, this time I'm gonna use a knife and fork.
14:08 >> Put it down, forget this knife and fork business.
14:10 >> Fine.
14:11 >> Pizza is with your hands.
14:12 >> It was so attractive with the large one.
14:13 >> Only way to go.
14:14 >> All right, let's go.
14:15 [MUSIC]
14:18 >> Mm.
14:19 >> Wow.
14:20 [MUSIC]
14:22 >> That is pizza.
14:24 >> All right, now, the first thing that hits me, apart from, of course,
14:28 the creaminess of the cheese and the softness of the lamb, is that basil in
14:32 the pesto.
14:33 It just cuts through it and
14:35 kind of adds a little bit of kick to the pizza, I like that.
14:39 >> Well, I'm gonna try that one just now, but
14:40 this salmon is really hitting that spot.
14:44 >> This is good.
14:45 The olives are a nice touch, actually.
14:47 I much prefer black olives than green olives on a pizza.
14:50 >> Really?
14:50 >> Yeah, green olives are not the pizza.
14:52 >> I like all olives.
14:53 >> No, man, green olives you could eat, green olives you can do for
14:56 cocktails, but on pizza, black olives.
14:58 >> You know, I always thought seafood was such a weird thing to put on pizza.
15:02 >> Yeah, a lot of people do.
15:03 >> But honestly, this really works.
15:04 >> No, man, seafood on pizza.
15:05 >> It's really good.
15:07 >> I feel that.
15:08 >> Hi, good afternoon, how was the pizza?
15:10 >> This is phenomenal.
15:11 >> I've never had a lamb pizza before.
15:13 I love lamb, I like pizza, lamb pizza.
15:16 >> Have a seat, don't be a stranger.
15:18 You did make us pizza.
15:19 >> Yes.
15:19 So I should have a slice of pizza then?
15:22 >> I think you should.
15:23 >> A slice of the good life.
15:23 >> Of your own, get your own pizza.
15:25 >> Yeah, just choose which ones.
15:26 >> All right, I would like that.
15:27 >> Whose one are you gonna choose?
15:29 >> Maybe this salmon, all right?
15:31 >> Right choice, I'm not into sharing.
15:33 >> Because he's not sharing.
15:33 >> No, no.
15:34 >> I think I get from you.
15:35 >> Okay, wait, hold on.
15:38 Let's get this sorted.
15:39 >> Are you a fork and knife person?
15:42 >> For pizza?
15:43 >> Yeah.
15:44 >> Okay, Chanel.
15:45 >> Hold on.
15:46 >> Aha.
15:47 >> Let me tell you something.
15:47 I believe that it's important to get intimate with your food.
15:50 And a fork and knife takes away from that intimacy.
15:52 And pizza's one of those comfort foods with which you should get as close as possible.
15:57 >> Correct.
15:57 >> Forget that knife and fork business.
15:59 >> You're still talking about pizza, right?
16:01 >> [LAUGH]
16:02 >> It affects the pizza as well.
16:03 >> [LAUGH]
16:04 >> So, chef, tell me a bit more about the crust.
16:09 I mean, I know it's thin crust, but a lot of thin crust pieces I have,
16:15 I've had it have a bit more of a crunch.
16:17 This one is not as crunchy.
16:19 Was that intentional?
16:19 >> Yes, because one of them, I think the lamb is crunchy and the salmon is not.
16:25 >> That's right.
16:26 >> And I was explaining to one of your crew, it depends on the temperature of the oven as well.
16:31 >> Wow.
16:32 >> The temperature of the oven gives it a harder crunch or a softer feel on the dough.
16:40 >> Well, I'm just curious, why pesto?
16:42 I mean- >> Pesto is love, guys.
16:43 >> It is actually, but pesto on a pizza, I never really made a question.
16:46 >> Actually, we have one, no, pesto on a pizza.
16:51 We have a grilled vegetable pizza coming up.
16:54 >> Mm-hm.
16:55 >> With roasted vegetables.
16:56 >> Is it coming out now?
16:57 >> No.
16:57 >> Is it?
16:58 >> Yeah.
16:58 >> In the near future.
16:59 >> Roasted vegetables on the pizza.
17:00 >> That's a lot, though.
17:01 That was really great.
17:01 >> Pesto, I think.
17:03 >> It's a delight.
17:03 >> Yeah, but you don't even eat it, so why?
17:05 Come on, take a bite.
