00:05 Her devotion to improving food quality, quantity and availability began during her early years
00:11 growing up in Reform Village.
00:13 Dr. Shakuntala Thilsted's advanced studies propelled the former Naparima Girls College
00:18 student on a quest to confront global hunger.
00:22 And after laboring for decades, Dr. Thilsted was bestowed with this year's World Food
00:26 Prize, regarded as the Nobel Prize for Food and Agriculture.
00:31 In an interview from her home in Denmark, the nutrition scientist renewed calls for
00:35 a transformation of food systems towards healthier diets.
00:39 I do think we have, if we would make the shift, we can have food systems that really match
00:47 to what we need to have, to have well-nourished people, well-nourished nations and a well-nourished
00:53 planet.
00:54 So, I mean, there is hope, but really more of us have to join this and you have to have
01:01 all stakeholders in place and working towards the same goal.
01:06 Dr. Thilsted said efforts to propel shifts in the food supply chain were impacted by
01:10 the COVID-19 pandemic.
01:11 But if you would take the COVID-19 pandemic, what this has done, it has pushed many more
01:20 people into being food insecure.
01:25 Many more people have less access to nutritious foods.
01:32 Many poor people are going hungry.
01:34 And it's not just about food.
01:37 It's about that many who are engaged in food systems have lost livelihoods.
01:45 As the UN Global Food Systems Summit draws closer, Dr. Thilsted said, great awareness
01:50 must now be placed on the plate.
01:52 We haven't thought very much about the quality of food, the nutritional quality, the safety
02:01 and even the amounts that we should be consuming.

02:13 The owner of Karim's farm underscores the importance of bridging widening gaps.
02:17 Internet, we need to find ways of encouraging the population to buy local.
02:24 And that being said, we have some issues that we really need to fix.
02:29 The UN Food Systems Summit aims to launch new actions to transform the way the world
02:34 produces and consumes food as part of the decade of action to achieve the Sustainable
02:40 Development Goals by 2030.
