Aired (August 20, 2023): Chef JR Royol prepares a special dish from Quezon supposedly made by Mang Tomas of Dolores himself, which is a hybrid of caldereta and afritada called Sinantomas.

00:49 So we have ribs and we're just going to soak it in pineapple juice.
00:56 Some soy sauce.
01:00 And our banana ketchup.
01:05 And we're just going to marinate this for at least 15 minutes to, maybe overnight.
01:15 Mind you guys, if you're going to use fresh pineapple, it's important that you don't marinate it for that long because the texture will be ugly and it will be like a mess.
01:23 So if we soak it too long in fresh pineapple, the texture will be ugly.
01:29 So let's just leave this and we should prepare our stir-fry.
01:37 After marinating our pork ribs for more than 5 minutes, we can now continue to cook this native Dolores Quezon dish that they call Sinan Tomas.
01:47 We'll start off with our tomatoes.
02:05 Once our pan is hot, we can sear our pork.
02:09 Once we're satisfied with searing our pork, we can now add our stir-fry ingredients.
02:30 Our tomatoes, then our onions, and since we have a lot of garlic, we can add it at the same time.
02:38 And then of course, the soy sauce.
02:42 Once our tomatoes are already searing, we can now add our marinade.
02:56 And if you have fish, it's better.
02:59 We'll let this boil for 15 minutes and then we'll come back to add our potatoes.
03:20 Once our potatoes are soft, I'll add our bell peppers and garnish with green peas.
