Ingredients:
4 Butter Cubes
2 Tbsp Ghee
2 Bay Leaves
1 Black Cardamom
4 Green Cardamom Pods
6-8 Cloves
½ kg Mutton (cooked)
Coal
1 Tsp Dried Fenugreek Leaves
1 Tsp Ghee
1 Tsp Ginger-Garlic Paste
2 Tomatoes (blanched)
2 Green Chilies (sliced)
½ Tsp Turmeric Powder
1 Tsp Red Chili Powder
1 Tsp Coriander Seeds Powder
1 Tsp Cumin Seeds Powder
1 Tsp Garam Masala Powder
½ Tsp Black Pepper Powder
1 Tsp Salt
Mutton Stock
4 Tsp Curd
1 Tbsp Coriander Leaves (chopped)

00:00 Today I'm going to make a delicious mutton recipe called 'Makni Mutton Kadai'.
00:04 To begin the recipe, first we'll put the coal for smoking as the recipe requires a smoked mutton.
00:15 By that time we start the recipe, I'm going to switch on the gas.
00:18 Add cubes of butter.
00:20 With that, little ghee.
00:25 After the butter melts, I'm going to add whole spices. In that, I'm going to add 2 bay leaves, 1 black cardamom, 4 green cardamom and few cloves.
00:34 At this stage, I'm going to add boiled mutton in which I've just added salt.
00:40 After adding the mutton, I'm going to switch off the gas.
00:45 Put a bowl in the centre.
00:47 To that, I'm going to add the coal which we had heated up earlier.
00:50 To the coal, I'm going to add little bit of kasuri methi.
00:53 Ghee.
00:56 And close it for at least 5-10 minutes and then we start the cooking process.
01:00 The mutton is smoked, let's continue with the dish. For that, I'm going to switch on the gas.
01:15 The butter is hot, let's add in ginger-garlic paste.
01:19 And cook till the rawness of the ginger-garlic paste goes away.
01:22 As the rawness of the ginger-garlic paste is gone, I'm going to add blanched tomatoes.
01:26 With the tomato, also I'm going to add sliced chilli.
01:31 Give it a one good mix.
01:33 And after giving a good mix, let's add the seasoning.
01:42 For that, first I'm going to add turmeric powder.
01:44 And then, I'm going to add salt.
01:46 And then, I'm going to add the red chilli powder.
01:48 After giving a good mix, let's add the seasoning.
01:50 For that, first I'm going to add turmeric powder.
01:52 Red chilli powder.
01:54 Coriander powder.
01:56 Cumin powder.
01:58 Garam masala.
02:00 Some black pepper.
02:02 And salt.
02:06 Let the masala nicely mix up with the mutton.
02:12 Let's add the masala to the mutton.
02:14 At this stage, so the masala doesn't get burnt, I'm going to add little stock.
02:25 Now, cook till the rawness of the masala goes away.
02:31 As the rawness of the masala is gone, I'm going to add little curd for richness.
02:41 So that, the curd doesn't split.
02:42 And give a nice big stir.
02:44 Cook on low flame till the curd is nicely cooked.
02:48 After cooking the curd for few minutes, I'm going to add fresh coriander leaves.
02:54 Give it a one good stir.
02:56 At this stage again, increase the heat.
03:03 Add little stock.
03:10 And cover and cook it for 10 minutes more.
03:12 And then we'll do the serving.
03:13 And there you go guys, Makhani Mutton Karahi is now ready.
