00:00 Hello, you lovely people, this is me the Bombay Chef Varun Inamdar
00:02 and welcome to 'Get Curried'.
00:04 Ganeshotsav is here.
00:05 And which means the season of Modaks is literally here.
00:09 Today, let's make something unique and special.
00:11 Well, this is the year of Millets, 2023.
00:14 Let's make Millet Modaks.
00:17 And because the recipe is so unique and special,
00:19 let me also through the course of the recipe,
00:22 introduce you to something which is equally unique and special.
00:25 An international range of kitchenware from Thin Kitchen.
00:29 Let's begin with the recipe, Millet Smodak.
00:31 You know the best part about these Millet Laddus,
00:41 of course the fact that it has a lot of goodness of Millets,
00:44 but it also has nuts like Almonds, Cashews,
00:47 you can go all out and add Hazelnuts and Walnuts and all those good things.
00:50 It's also sugar free.
00:52 I'm using dates in this recipe.
00:54 I'm also using Linseeds and Sesame seeds,
00:56 and like I said a lot of good things.
00:59 For now, let's begin with chopping the nuts,
01:01 for which I have my Joseph Joseph folding cutting board.
01:04 And also with this, I have a Joseph Joseph set of 5 knives.
01:07 Quite a variety here.
01:09 But I'm going to use this one.
01:11 Let's take in some Raw Almonds.
01:16 And chop these roughly.
01:18 You know the best part about this knife,
01:28 it has an innovative weighted handle,
01:30 because of which it ensures that the blade is always raised off the work surface.
01:35 You know I'm also chopping the Almonds and the Cashews at this stage,
01:39 because I want them to be nicely roasted.
01:43 Eventually of course we're going to run all of this into a powder,
01:45 but for now, let's chop this roughly.
01:48 Let's move on to Cashew Nuts.
01:51 And again like I said, let's chop these roughly.
01:56 Well nuts and seeds are extremely nutritious.
01:59 This recipe uses a combination of not just nuts,
02:02 but also a lot of seeds,
02:03 which of course I will introduce you through the course of the recipe.
02:06 They're not just a good source of protein,
02:08 but also add in a wonderful fat,
02:12 in this case healthy fat,
02:13 which is like a prerequisite for our bodies.
02:15 Well as you notice,
02:17 the surface of the cutting board is knife friendly.
02:21 And this is not just good for nuts,
02:23 but any kind of food preparations.
02:25 Remember that.
02:27 Nuts are cut and ready,
02:28 let's move on to the next and the most critical step,
02:30 and that is frying all of this.
02:33 Now for this, I'm going to use a Xylus Frying Pan.
02:35 I actually get asked a lot about frying pans,
02:39 what to use, what not to use.
02:40 This in my personal humble opinion is the most perfect.
02:43 This is a Xylus Frying Pan.
02:46 The specialty of this pan is that it has a 3 layer PFOA.
02:50 This non-stick pan is reinforced with the ultimate ceramic coating,
02:54 leading to great kitchen performances.
02:56 That's about the pan.
02:58 Let's turn the flame on.
02:59 And transfer these chopped nuts to the pan.
03:03 Let's move on to some seeds,
03:09 beginning with Linseeds,
03:12 White Poppy Seeds.
03:14 And lastly White Sesame Seeds.
03:17 Let's pan fry these nuts,
03:21 till they're wonderfully fragrant.
03:23 Ensuring that they do not burn,
03:25 not more than 2 to 3 minutes.
03:27 Medium flame is just about perfect.
03:29 Once these nuts are beautifully roasted,
03:32 the next step is to ensure and allow,
03:34 these to come down to room temperature.
03:36 That way, the grinding becomes better and safer.
03:39 The next step is to add in Ghee,
03:42 Dates and Cardamom for flavour.
03:44 And grind this.
03:45 Let's cover this and grind it up.
03:48 Our Nut, Seed, Ghee and Date mixture is done and ready.
03:53 Let's transfer this in a bowl.
03:55 And let's add in the rest of the ingredients.
04:01 So, we have here,
04:02 1/2 cup of Ghee,
04:03 1/2 cup of Sugar,
04:05 1/2 cup of Water,
04:06 1/2 cup of Water,
04:08 1/2 cup of Water,
04:09 1/2 cup of Sugar,
04:11 1/2 cup of Water,
04:12 1/2 cup of Water,
04:14 1/2 cup of Water.
04:15 Let's now move on to our hero ingredient,
04:18 and that is the Millet Flour.
04:20 Well, in this case, I'm going to use,
04:22 Ragi Flour or Nachni Flour.
04:25 By all means, you can use assorted Millets,
04:27 you can bring in your 5 grains, 6 grains,
04:30 create your own little assortment.
04:31 And pan fry this.
04:33 Now, I'm again using my Silas frying pan.
04:36 And toast this till it turns malty.
04:43 The flour is toasted and ready.
04:45 With this off goes the flame.
04:47 Let's add in the hot flour,
04:48 to a Nut and Seed mixture.
04:50 Let's mix this well.
04:53 To add in an element of flavour and colour,
04:59 let's also add in Pistachio, finely chopped.
05:02 And mix this.
05:04 Once you see that all of this has come together beautifully well,
05:10 we start putting this into moulds.
05:12 And in this case, the Modak shaped mould.
05:15 Let's make some more.
05:26 And with this, ladies and gentlemen, Millet's Modak done and ready.
