00:00 When you're away from home and you're craving homemade sweets
00:03 or you want to celebrate an auspicious occasion with your friends
00:06 I have a quick fix for you.
00:08 Let's see the recipe for Suji Halwa Pre-mix.
00:11 To make this pre-mix, let's heat up half a cup of ghee.
00:16 Once the ghee starts to heat up, add in 3 tbsp of cashew nuts
00:22 and 3 tbsp of sliced almonds.
00:25 Fry the nuts in the ghee till they change colour.
00:29 Once they start to change colour, let's quickly get them out.
00:33 Next, in the same ghee, I'm going to add in 1 1/2 cups of suji.
00:44 This is the thicker kind that we use for Sheera and Upma.
00:48 Roast this for at least a good 4-5 minutes on low heat.
00:53 Keep stirring so that it doesn't burn.
00:56 Keep stirring so that it doesn't darken very quickly.
00:59 You know when this mixture is ready once you start seeing some ghee in the pan.
01:04 You can see the droplets here.
01:06 It started to ooze out the ghee again.
01:09 Let's turn off the flame.
01:10 Next, add in 3 tbsp of raisins.
01:13 1 tsp of Cardamom Powder.
01:16 A few strands of Kesar or Saffron.
01:19 Let these ingredients roast in the hot suji or semolina.
01:24 For a few seconds.
01:26 And now, remove it in a bowl and cool it down completely.
01:29 This mixture has cooled down and time to add a few more ingredients.
01:36 I took 1 1/2 cups of granulated sugar and then powdered it.
01:40 So let's add it in.
01:42 Make sure your mixture is completely cooled before you add in the sugar.
01:47 Otherwise, the sugar is going to start to melt.
01:50 Next, add in 2 tbsp of Milk Powder.
01:54 Also add in the fried nuts.
01:57 Give all these ingredients a good mix.
02:01 Fill the pre-mix in a jar or ziplock.
02:11 The pre-mix is ready.
02:15 Time to make the Halwa.
02:16 So in a pan, I am going to heat up 1 1/2 cups of water.
02:21 Once the water starts to boil, add in the Halwa mix.
02:28 The proportion to the Halwa mix and water is
02:33 1 cup of Halwa mix and 1 1/2 times of water.
02:36 Cook this till it thickens.
02:38 Hi Ruchi!
02:44 Hi!
02:45 How many days can we store this pre-mix?
02:47 You can store this pre-mix for at least a good 3-4 months in the refrigerator.
02:51 So what should be the ideal water to pre-mix ratio?
02:55 The ideal proportion of water to pre-mix is
02:57 if it's 1 cup of the pre-mix, then 1 1/2 times of water.
03:01 Okay.
03:02 Can this be made in the microwave?
03:04 Of course it can be made in the microwave.
03:06 You need to mix the water and the pre-mix
03:09 and microwave it for at least a good 1 1/2 minutes.
03:12 Give it a stir once in the middle.
03:14 This Halwa is ready.
03:22 Let's turn off the flame.
03:23 Now you're not going to miss your mom's Halwa
03:34 even if you're away from home.
03:36 Let me know if you want more such pre-mix recipes.
