00:00 Traditionally, making sweets during Diwali
00:02 is always an elaborate affair.
00:04 But right now, in this fast-paced life,
00:07 it is very difficult to keep up with these traditions.
00:10 Today, I'm bringing to you a recipe
00:12 which is so quick that can be made at home
00:14 and gifted to your loved ones.
00:16 Today, we're making stuffed dates in three different types.
00:20 Let's see how to make it.
00:21 The hero ingredient of this recipe is dates.
00:24 Today, I'm using Kalmi dates.
00:26 Let me show you how to deseed them.
00:29 First, we'll remove this hard part,
00:31 which is on top of the date.
00:33 Then we'll slice through from the center,
00:37 open up the date,
00:39 and remove the seed from the center.
00:43 We're going to leave this open
00:46 because we're going to stuff these dates.
00:49 I'm going to do the same thing with the other ones as well.
00:52 If the dates that you're using are too sticky,
00:55 you can also put a little bit of oil on your knife
00:59 so that it doesn't stick to your knife.
01:01 I'm using premium Kalmi dates today,
01:04 but you can also use any other kind of dates
01:07 that you might have at hand,
01:10 either Medjool, Fardh, or any other type of date
01:13 that you can find.
01:14 The dates are ready to be stuffed.
01:18 Now let's have a look at our fillings.
01:20 The first filling is going to be cashew nuts.
01:23 I'm going to roast the cashew nuts in some salt.
01:25 So I have a pan over here
01:27 where I've been heating up table salt
01:30 for about 10 minutes on medium flame.
01:32 Let's roast our cashews in this.
01:34 When you roast nuts in salt,
01:37 it's very easy to get an even color all throughout them,
01:41 and they also get a little bit of saltiness,
01:44 which is perfect because this is going to balance out
01:46 all that sweetness from the dates.
01:49 We're going to roast the cashew nuts
01:50 till they're a little golden brown.
01:52 If the salt is heated properly,
01:54 it will hardly take a few minutes to roast the cashew nuts.
01:58 I'm just going to remove all these cashews in a bowl.
02:03 They have a nice and even color,
02:05 and if you notice,
02:06 there's a thin layer of salt all around them.
02:09 Similarly, I'm also going to roast some pistachios.
02:13 Pistachios will definitely be ready in just one minute
02:16 because normally pistachios are already roasted.
02:21 Similarly, I'm also going to roast some almonds.
02:24 Almonds will take about five minutes to roast properly.
02:28 If you want to check them,
02:29 you can cut them in half and check the color.
02:33 I'm going to toast them
02:34 till they're nice and dark brown from the center.
02:38 Roasted almonds taste so good with anything sweet.
02:42 While roasting the nuts,
02:44 you may also hear some popping sounds.
02:47 Don't worry about it.
02:48 It's just the skin of the almonds
02:50 or pistachios cracking up.
02:53 I'm just going to pick up a date
02:55 and fill it with our toasted cashews
02:58 and some chopped candied orange.
03:01 This will add a nice citrus note to your dates.
03:05 I'm going to close the dates,
03:07 and to finish this off,
03:08 I'm going to close it with some candied orange peel.
03:12 The flavor of the cashews,
03:14 candied orange, and dates tastes amazing.
03:18 If your dates are smaller in size,
03:20 you can also chop up the cashews
03:21 and then add them to your dates.
03:23 The buttery texture of cashews
03:26 and the citrus flavor of the orange
03:29 complement very well inside the date.
03:32 Now let's move on to the second one,
03:36 which is roasted almonds.
03:38 For the second type,
03:40 I'm going to stuff it with some roasted almonds,
03:43 close up the dates,
03:45 and now for my favorite part,
03:47 I'm going to dip it in some dark chocolate.
03:50 This chocolate has been melted and cooled down.
03:53 Make sure the chocolate is not too hot,
03:56 otherwise you'll have a little bit of marbling on top,
03:59 and that won't be nice to see.
04:01 Now place it on parchment paper,
04:04 and then I'm going to top it off
04:06 with some chopped roasted almonds.
04:09 If the chocolate is melted properly,
04:11 it will set very quickly.
04:15 After dipping, you can always remove the excess
04:17 on the side of the bowl.
04:19 Ensure that you close the dates properly
04:26 before dipping it in chocolate
04:27 to avoid the almonds from coming out into the chocolate.
04:30 If you see any bubbles,
04:33 you can tap your fork to get rid of them,
04:36 or just use a knife to burst them.
04:39 You can also use another spatula to take it off the fork.
04:45 (gentle music)
04:47 Now let's move on to the third type,
04:51 which is pistachio, rose,
04:54 and a little bit of milk chocolate.
04:56 I'm going to stuff the dates with some pistachios.
04:59 Make sure you're stuffing the dates properly
05:08 so that you get a crunch in each bite that you take.
05:11 (gentle music)
05:15 Now time to drizzle the pistachio stuffed dates
05:18 with some milk chocolate.
05:19 I'm just going to use a fork,
05:21 take a little bit of chocolate and drizzle it.
05:24 I'm going to top this off with a few rose petals
05:28 and some chopped pistachios.
05:30 The stuffed dates are ready.
05:33 Now let's see how to present them as a gift.
05:37 I found this beautiful box at a nearby bakery store.
05:41 I think it's perfect for Diwali
05:42 because it has some lanterns, diyas,
05:44 and ethnic motifs on it.
05:47 This box also has some cavities
05:49 so that the dates can stay separate from each other.
05:52 I'm going to start with our rose and pistachio flavor
05:56 from the corner.
05:58 Now I'm going to alternate it
05:59 with the cashew and orange one.
06:01 Roasted almonds.
06:08 Our super simple and beautiful looking dates are ready.
06:12 Try this recipe out during this Diwali
06:14 and let me know how it turns out.
