Goodwood's Rising Culinary Stars: Apprentices 'wow' guests with gourmet three-course meal

Goodwood hosted a Culinary Academy Apprentice Dinner to showcase their up-and-coming chefs at The Kennels to celebrate National Apprenticeship Week.

00:00 Us apprentices have been given this opportunity to run our own event night, running our own meal.
00:06 It's exciting, but then we've, for the last few weeks, many planning meetings.
00:12 My mum especially, she's been talking to me non-stop about it.
00:15 Once I showed her the menu, she's really looking forward to coming here especially.
00:18 I think for many young chefs, I would 100% recommend this Goodwood Apprenticeship.
00:24 I mean, when I came into it, I wasn't too clued up.
00:27 You know, especially knife skills is one of the biggest things I've picked up on.
00:31 You know, just even grips, methods.
00:34 It's, if you really want to, I really want to push myself with this career.
00:38 And this is, I feel like it was the perfect break for me to try and do that and learn more, express myself a bit.
00:45 So it's been really good so far and I'm looking forward to the rest of my time here.
00:49 I started in sport. I've been a sporty person my whole life.
00:55 And I've just found myself here and it's amazing.
01:00 You get to see from farm to fork.
01:03 So you get time off at the farm and then you go into restaurants and you just learn, like, how it's done.
01:12 In the farm, how they breed the animals, like organic meats and milking.
01:20 And it's just the best experiences that you'll ever try on this sort of estate, this size.
01:27 I heard about it when Goodwood came into college and they did a college takeover.
01:33 Ever since then, I was always interested in doing something like this.
01:39 The standouts have been making really nice dishes, slicing really fine bits of meat, which I've never done before.
01:47 So it's been a really good lesson of doing it.
01:50 It's been the most amazing experience of my life, working here.
01:55 All of the staff I've worked with so far, they've been lovely, honestly.
01:58 They're really understanding and will help with you.
02:00 And if you don't understand something, it won't work if you feel like an idiot.
02:03 They'll actually explain it to you and make sure you know how to do it before you leave the kitchen.
02:06 It's a lot better because obviously sitting in a classroom, it doesn't appeal to everyone.
02:09 Actually getting in there and doing the stuff, it's a lot more appealing, at least to me and other people.
02:14 I think the apprenticeship schemes, all over, they're really good for people who are very hands-on with their subject.
