00:40 It's a really good first step for us. The Michelin Guide is such a prestigious guide and to be considered is a great achievement in itself.
00:50 Obviously we want to push on even further now and achieve even more. So it's a really big first step for us.
00:58 And to get it so early on is great for the team that are working hard to try and achieve the things that we want to achieve here.
01:05 I think it was just a great achievement with us only being open for three months and to get into the guide.
01:11 I think because we've worked so hard to get to where we are now and for that after three months, it's just the whole team, you know, we've worked so hard. Craig's worked so hard.
01:19 Obviously The Collective's been here for a couple of years and it was one thing before, but we're definitely going through a bit of a transition period about where we want to be as a restaurant and as a store.
01:29 Because obviously we offer the store side of what we do as well, which is a nice sort of thing for our guests to know that they are eating in a restaurant,
01:37 that essentially you can buy everything you see. So we're very much focusing on the restaurant now moving forward. We'll be introducing the lunch menu very soon.
01:45 I've been here about five years now. I studied at university and did fashion, so this is totally different to what I did my degree in, but I obviously love my job.
01:55 And I think it's a great, you know, we've got a great location and as a venue we're so different to everywhere else, you know, with us having the store and selling everything you can see.
02:04 I think it's such a great concept that you can come, eat somewhere and you can take, you know, a painting home with you. It's just, it's a cool concept. There's nowhere else like it in Leeds.
02:14 Obviously I'm not from Leeds, but I've lived in Leeds for seven years now and I absolutely love it. It's where I call home now. I'll see myself being here a very long time.
02:21 And I've got a very close connection to Leeds and obviously, you know, Yorkshire itself has got such amazing produce that you never have to worry about good supplies or cooking nice food,
02:31 because there's so many good suppliers out there doing some amazing things. So Yorkshire is definitely for me the place to be at the moment.
02:39 There's a lot of great new places coming up in Yorkshire and also some really top established places here as well.
02:45 So, you know, they call it God's country. I'm pretty sure that's probably correct.
02:49 But yeah, Leeds for me is home now and it's definitely where I see myself progressing even further and trying to put Leeds on the map a little bit more with food and making it a really top dining destination alongside, you know, some of the other great restaurants that are already here.
