00:00 We're going to show you how to butterfly bone a leg of lamb.
00:06 For this you need a really sharp knife, a boning knife is handy because it's got a
00:10 thinner blade.
00:12 Guide your knife very carefully along the leg bone, feeling your way as you go.
00:28 Keeping your knife close to the bone, just cut away.
00:54 Trim off any sinewy bits and then open up the edges, what you really are looking for
00:59 is an even thickness of meat.
01:02 So you can see we're trimming along the sides and then putting in the stuffing.
01:10 It's a bit messy but just stuff it all in and roll it.
01:23 Now you'll need some butcher's string and just make evenly spaced knots all the way

01:30 Probably leave a couple of centimetres in between each tie.
