00:02 This is fermented rice, a Kapampangan delicacy that is made by combining cooked rice, salt, and fish.
00:08 Or in other words, shrimp.
00:10 And the way we usually eat it is often paired with fried fish, vegetables, and wrapped in mustard leaves.
00:18 That's why before Samgyup became popular here in the Philippines,
00:21 us Kapampangan have our own version of lettuce wrap.
00:24 And this is how we cook it to make sure it doesn't get spoiled.
00:28 We'll cook a medium packet of buro.
00:31 And for that, we'll saute it using a whole bottle of oil, a lot of ginger, and onions.
00:37 We won't save the ginger and oil because we'll boil the buro here for a long time
00:42 to make sure the smell will be gone.
00:44 Up next, we'll add tomatoes.
00:46 I'm also very generous in adding them because this is where the nice color and, of course, extra flavor comes from.
00:51 Finally, we'll add the buro.
00:53 So there, you'll see the rice and there's also the fish.
00:57 Then, you'll season it according to your preference.
00:59 I like to add some green chilies for extra fragrance.

01:06 Just make sure to stir occasionally so it won't get burnt.

01:11 Since this is fermented, buro has a natural sourness.
01:14 So some people add a little sugar to balance that out,
01:17 and others who prefer it to be more sour add a little Sinigang mix.
01:21 Like I said, that's their preference.
01:23 But regardless of the version, this is definitely one of the usual side dishes when you're in Pampanga.
