00:00 This is one of the ingredients that celebrate Pinanggalingan,
00:05 by Ma'am Heidi, their labog, which is a common sour spice in Iloilo.
00:12 When we first met her, I asked her online what are the dishes that she uses.
00:19 So usually, sinigang, inapak siyo sa isda,
00:23 basically anything that needs sourness, she uses it, our food explorers in the South.
00:32 So basically, I love bangus.
00:35 So very simple ingredient, we just stuff labog in our bangus.
00:41 So we'll just mince it.
00:43 Ma'am Heidi said that her tip is that when you get something to cook,
00:50 is to make sure that the part with the seeds,
00:55 means that there are no seeds or flowers yet.
01:00 So after we mince the leaves, we'll just roll it.
01:08 I just want to slice it thinly.
01:18 So this is the sliced onion.
01:20 Before we put the sliced labog, I'll just put a little salt.
01:25 And of course, pepper.
01:27 Then our labog.
01:36 Since we've seasoned our stuffing, when you season your protein,
01:44 in this case, our isda, make sure that you'll season it with salt or any other seasoning that you like.
01:51 We'll just cook our stuffed bangus until it's cooked.
02:11 Later, we'll see if Ma'am Heidi's combination of labog and bangus will match.
