We head down to Finnieston’s Porter & Rye to see their additions for Cocktail Week.

00:00 I'm Dan and I'm going to be making a drink today which we'll be doing for cocktail week here at
00:04 Porter & Rye in Finnison. So Porter & Rye, we are a steak restaurant predominantly that specialises
00:10 in aged meats, however we do have a rotational seasonal drinks offering as well which updates
00:16 using obviously very seasonal ingredients and they're absolutely scrumptious. Anyway so today
00:23 I'm going to be making Da Bomb which is made using Aberfeldy 12 year old delicious wee dram,
00:30 and so we're going to be using 35 ml of this. I'll chuck that in our wee shaker.
00:35 I also have some grapefruit citrate here which is essentially made using by macerating grapefruit
00:44 peels in water and then adding two different acids and some MSG to it and it produces a really,
00:50 really tart yet very, very light replacement for actual citrus. Then last but no means least,
00:59 I have some hickory smoked honey here. So essentially a very light honey syrup in which
01:04 I've reduced down and then smoked using our smoking gun with hickory chips just to produce
01:11 a little, little twinge on the tongue. And then I'm also going to add some
01:16 foaming bitters just to add a little bit of texture there and then we're going to shake it up.

01:37 And with these foaming bitters I'm going to do a little dry shake as well which is just shaking
01:42 without the ice just to once again add that kind of frothy texture on the top just to really help
01:49 with the mouthfeel of the drink. Whip that up a wee bit, get our glass ready.

02:13 So it has a nice little frothy consistency and we're going to top this off with a couple of
02:21 sprays of tonka infusion. Delicious. Will I take a drink?

02:33 So yeah, we'll be running four different cocktails here at Portonrye,
02:36 working with the partner brands so we've got some interesting wee drinks in store. So pop by.
