Like having quiche, but with half the work.

00:00Quiche can be fussy, frittata doesn't have to be.
00:10It is so simple to scramble some eggs along with some yummy meat, some veggies, cheese,

00:18It really does smell so good.
00:21I have kale on hand so that's what I'm going to use.

00:25I mean really this is just like the filling of a quiche, but like half the work.
00:30You want to keep the temperature low and slow, stirring constantly so your eggs get light
00:35and fluffy.
00:36Take a look at these tiny little mozzarella balls.
00:39They're called bocconcini and I love to just nestle them into the eggs.
00:44It's like when you cut into a margarita pizza and you have those little pieces of fresh
00:48mozzarella.
00:49This tastes just like that.
00:51And now I'm going to let the oven do the rest of the work.
00:54It is so simple to make weeknight frittata, but it's such an elegant way to end the evening.
