Lighter than a regular pizza but still with all of the classic flavors of cheese, meaty toppings, and pizza sauce, this veggie-based dish is a must-try. In this video, Matthew Francis tries his hand at a low-carb eggplant pizza dinner. Using seasoned and roasted eggplant slices in the place of pizza dough, each slice is topped with Italian sausage, mushrooms, and mozzarella cheese. Once broiled in the oven, these pizza bites are a dream come true for pizza lovers who are cutting out carbs and gluten.
