The origin of this dish dates back to Guilan Province, northern Iran.
You can prepare an unforgettable meatless dish with a few simple ingredients.
I really love this dish because of the smoky flavor of grilled eggplant and garlic.
served with both rice and bread, but I prefer to have it with freshly-baked bread.
Today, I’ve baked an Iranian traditional bread called Taftoon. It’s very easy and enjoyable to bake taftoon on a cast iron pan, which is called a saj.

Ingredients for 6 Servings :
2 kg of Eggplant
10 Medium Tomatoes
6 Cloves of Garlic
2 Tablespoons of Tomato Paste
4 Eggs
Salt, Black Pepper Powder and Turmeric Powder as Needed

Ingredients for 8 Taftoon Bread:
800 gr. Baking Flour
20 gr. Sugar
10 grams of dry yeast
10 gr. Salt
4 Tablespoons of Fresh Yogurt
8 Tablespoons of Oil
400 grams of Tepid Water
