00:00I've got the best surprise treat for you.
00:02This recipe starts with a super simple pickled onion
00:04that sits for a few minutes
00:05while you get everything else ready.
00:07Then get a nice large watermelon,
00:08cut out the center section into a couple round thick slices,
00:11and then just cut the rest up for snacking.
00:13Brush one side of the slices with olive oil
00:15and place them on a super hot grill
00:17that's been coated with oil or cooking spray
00:19to prevent sticking.
00:20You just wanna cook it for a couple minutes
00:21to get grill marks so that the sugars rise to the surface
00:24and make this extra sweet and juicy.
00:26Slice it in wedges and top it with the pickled onions,
00:28salty feta, fresh mint, crunchy walnuts,
00:30a drizzle of the onion brine, and cracked pepper.
