We speak to the Ubiquitous Chip’s head sommelier Dan fr his summer wine recommendations.

00:00Hi, I'm Dan. I'm the head sommelier for the Ubiquitous Chip, and I'm going to recommend a few wines for summer.
00:05So the first of the wines that I'm recommending is this Carver from Bodegas, Sumaroca.
00:09It's an old kind of carver house that was set up by someone who used to sell fruit trees across Spain.
00:20They finally settled down and started producing wine and making these absolutely phenomenal carvers.
00:26So this particular one is actually their rosé carver. It's a very, very light rosé.
00:32Almost kind of easy to mistake for just a sparkling kind of white wine,
00:38but you get these really kind of fresh red fruits, little notes of strawberry,
00:43and it's got a long kind of aging period on its leaves, which means it kind of takes on flavor and complexity from the yeast,
00:52which is used to re-ferment the wine in the bottle.
00:54So it's left like that for 15 months, which gives it loads of depth and lots of really nice, almost brioche-y kind of flavors.
01:03So the second recommendation I have for you here is a wine from Domaine Cap Martin.
01:07So Domaine Cap Martin is run by Simone Cap Martin,
01:10who kind of takes these areas of France in the southwest of France and works in these kind of quite traditional areas,
01:20but in a very modern and progressive way.
01:21So this is a wine called Pimpon, which is a blend of three different grapes.
01:25You've got Syrah, or you might know as Shiraz as well, making up most of the blend.
01:31Then a grape called Tannat and Grenache.
01:34So these are kind of grapes that are normally quite heavy and rich, but the way that Simone has worked with this,
01:39he's used a technique called carbonic maceration, where the wines are fermented without any oxygen in the tank.
01:48And what that does, it creates freshness in these confected fruit qualities,
01:54and you don't get so much of the tannin, those kind of heavy qualities that the grapes have.
02:00So this is just a really fun, fresh, really ripe, juicy kind of red wine.
02:05I actually recommend having it slightly chilled as well.
02:06I think on a day like today when the sun's out, I think that's just absolutely perfect.
