00:00Let's make breakfast together. I'm going to be making cheesy chorizo omelets. This is what
00:06you're going to need. Some eggs, whatever type of dip. If you want to dip, I just like this.
00:12It's a salsa, that's for preference, chorizo, cilantro, and a lime. Start by cooking the chorizo.
00:19Just pop that in a pan. Okay, you are going to want to just kind of chop that up a little.
00:29It doesn't need to be like fine by any means, just some chunks so that it's evenly getting cooked.
00:39Okay, and now give that a nice stir around and with this in there. Okay, while that's cooking,
00:44you're going to want to grab a bowl and start cracking some eggs. It's up to your preference,
00:48however many omelets you're making. Now you're going to want to take up your cilantro and just
00:53finely chop that up and add that in with your eggs. Just a nice little punch in there will do.
00:59This is the part where your cheesy dip comes in. I have here my Blue Moose hatch green chili
01:06cheddar dip. Just pop a little bit in there. Okay, now we're going to beat that together.
01:12Make sure that yolk is nice and separated.
01:18Okay, now we have our chorizo in our bowl of eggs here. You're going to want to get something that
01:24has some holes in it and just scoop out some of that chorizo and let that oil just kind of
01:29soak out of it a little bit and then start adding some of that in. Again, up to your preference,
01:36however much you want. We're going to whisk that again. Make sure that that meat is nice and
01:43evenly dispersed in there. Now in a separate pan than the chorizo, you are going to want to add
01:54my butter fell out.
01:58That was a mess. Just add like a spoonful of butter into your pan.
02:03Let that melt and evenly just make sure that's nice and distributed across the pan. Now you're
02:10going to want to gently pour some of your mixture in depending on how big you want your omelet.
02:20Keep it moving a little bit so that that butter really like coats it evenly so you have a nice
02:27even cook. A little trick with omelets is I like to pull it down to the front like this.
02:36Take your spatula and you can kind of maneuver it like that.
02:47Make sure that both sides are nice and evenly cooked. Can't forget that you have to give it that
02:54omelet half fold. Fold it over like that. You can't see it but it's folded.
03:03Bring it over to a plate and just plop that on there. Okay, now garnish it with whatever
03:10you prefer. I'm going to use my salsa of choice which is just a spicy cream. Just plop that on
03:18there. Then I'm going to squeeze just a little bit of lime juice on top. A tiny bit of cilantro.
03:29Now you have your yummy breakfast. You have to let me know if you make it and if you try this.
