00:00Well, today's recipe is a winter special soup.
00:03Well, warming, wholesome, hearty, Bean Soup.
00:07Let's begin.
00:09Well, it's a hearty, wholesome soup which is also a one-pot recipe.
00:13And to add to that, it's continuing our series on Pressure Cooking.
00:17Well, it's very simple, you take vegetables of your choice.
00:20I have kept it very simple.
00:22I've taken Carrots, I've taken Capsicum, Tomatoes and Onions.
00:25You can go all out, bring in your leafy greens which are fresh in season.
00:29You can also make this exclusively with something like Radish.
00:33But remember the fact that if you use something like Radish or Turnips
00:36or even Cauliflower, the flavour gets extremely pronounced.
00:40In that case, choose just one vegetable and keep the remaining just as is.
00:45Very simple, I've taken Field Beans which are soaked couple of hours.
00:50And I also have Bengal Gram which is again soaked for a couple of hours.
00:54You keep this ready and then rest everything works like magic.
00:57Let's begin with Cutting Onions.
01:01Let's cut all these vegetables into medium dices.
01:05Let's keep this aside.
01:07And move on to Green Capsicum.
01:16Let's keep this also aside.
01:19And move on to Ripe Tomatoes.
01:22Let's cut this into slightly larger chunks.
01:24Because pressure cooking will otherwise convert this into a paste.
01:29Let's keep this as well.
01:32And finally, Carrots.
01:37Moving on to some Green Chillies.
01:40And these are of course the spicy ones.
01:42Removing the stalks off.
01:45And cutting this roughly like so.
01:47And roughly cut the cloves of Garlic as well.
01:49Just a couple of knocks like so.
01:52Our vegetables are cut and ready, let's move on to the pressure cooker.
01:56Gas on high flame and Oil in the pressure cooker.
02:00Let's add in Chillies and Garlic.
02:03And along with this, all the vegetables.
02:05Salt.
02:07Saute this for 30-40 seconds on high flame.
02:10You do not need to burn or anything like that.
02:12Just ensure that the vegetables begin to sweat.
02:15Time to add in the Field Beans.
02:17The Field Beans, which have been soaking in water.
02:22Along with this Bengal Gram, which is also been soaking.
02:26While I have used locally available regional vegetables,
02:30Well, nothing really great about it.
02:32I've kept it very, very, very, very, very simple.
02:35In case you want to kind of anglicize this or westernize this soup.
02:39Instead of the masalas that I'm just going to add in,
02:41You can just spike this up with Pepper, maybe a stick of Cinnamon.
02:46And keep it as simple as you can.
02:48Vegetable per se, you can add in Green Zucchini, Yellow Zucchini,
02:52Baby Corn, American Corn.
02:54You can bring in the whole layers of colours with Bell Peppers.
02:58Go all out.
02:59Like I said, I'm keeping it very simple, hearty and to my liking.
03:03Let's stir this well.
03:07And add in some more layers of flavour.
03:10Beginning with Red Chilli Powder.
03:12Followed by Turmeric Powder, Garam Masala Powder.
03:15Or you can also add in Curry Spice or Madras Curry Powder.
03:19Stir this well.
03:23Add in Water.
03:24And allow this to pressure cook.
03:28Stir this well.
03:31And there you go.
03:33Time to pressure cook.
03:37Well, 2 whistles on medium flame should just be about perfect,
03:40Because you want the shape of the beans and the peas,
03:44Or the Bengal Gram to kind of retain.
03:46Nevertheless, if you're looking at slightly mushy,
03:49You can go a little overboard, maybe a whistle, couple more here and there.
03:53But 2 should be good, but eventually what's important is that,
03:57The field beans and the Bengal Gram need to be cooked perfectly.
04:00Do not keep it even a grain undone.
04:03Because that eventually would not be that great,
04:06Neither to taste nor for your health.
04:08Let's wait.
04:14And with this, off goes the flame.
04:20With this, our wintry, wholesome, hearty soup is done and ready.
04:25And trust me when I say this is done under a couple of minutes.
04:28Make this for your family, make this for your friends,
04:30If you think somebody has just sprung in a surprise on you,
04:34Head to the kitchen, pull your pressure cooker out,
04:37And make this soup for them and surprise them in return.
04:39Bye for now.
