Love gyros but looking for a vegetarian alternative? Try halloumi gyros! This Cypriot cheese will be absolutely perfect as analternative to meat, as here it's pan-roasted with honey, for a sweet-savory combination that takes us on a journey in one bite :-) Accompanied by crudités and eggplant caviar, all wrapped in soft pita bread, this is THE perfect meal ;-)

Ingredients:
- 2 pita breads
- 7 oz Halloumi cheese
- 1 teaspoon olive oil (+/-)
- 1 tablespoon honey (+/-)
- salt
- pepper
- 1 tsp rosemary (+/-)
- 10 tsp. eggplant caviar
- 1/4 cucumber (maximum)
- 1/4 red onion (maximum)
- 4 mint leaves
- 2.5 oz feta cheese (+/-)
