00:35So if you'd like to introduce yourself. I'm Adam Hadwin, I'm a chef owner of the
00:58Alamarch pub in Lavant, over near Goodwood Estate in West Sussex, near Chichester. Today
01:05we've been doing a lobster lunch, which involved crab and lobster. The lobster was from Langford,
01:11the lobster was down in Selsey, and the crab was from the same. We've just done it for
01:16around 20 guests today, and it was about utilising all the parts of the lobster and the crab
01:20to create a very special meal. We've produced lots of elements, basically used each one
01:25to give a different perspective on how you can use crab and lobster throughout your
01:31meal, rather than just being a lobster on a plate, or just cabbage as you can see. And
01:36why is it you decided to get involved today? I got involved because I've had a long standing
01:40relationship with Stansted, as it stands anyway. I've used to work for Fred in the farm shop,
01:45doing various things with him, and I've done some of their events before. This is a great
01:49opportunity for me to bring my restaurant into an open air setting, and to let people
01:54experience it, not just in the pub itself. Also the South Downs Food Festival, it really
01:59just promotes what we have here in West Sussex, and also the border in Hampshire, as a food
02:05offering. There's so much that we have from the down, right down to the coast, and it
02:09gives us a huge variety of ingredients to play with.
