00:21I always keep a box of this in my pantry.
00:24Sometimes it can just be, you know, come in clutch
00:26when you need a quick side dish
00:28or just, you know, a little accompaniment
00:30to your soups and stews.
00:31Well, we're gonna get a little creative with it today.
00:33So I'm starting first with my little sweet and spicy
00:37Sloppy Joe casserole.
00:40Sloppy Joe casserole.
00:41Now, who doesn't love a Sloppy Joe?
00:43Green bell pepper is classic here.
00:45If you don't like it, you can do red or yellow.
00:47And say what you want, I know, like, you know,
00:49I think a lot of Southerners are gonna come for me
00:51a little bit, but this is what I use to make my cornbread.
00:54I don't, I like a sweeter cornbread.
00:56This is sure to be a family favorite.
00:58It's just a easy weeknight meal, comforting,
01:01but a little bit something different also.
01:03I'm also gonna go in with a couple cloves of garlic
01:05and then that's it.
01:07It's all gonna come together in our skillet.
01:09So I'm gonna go in with just a little bit of olive oil
01:11and get my onions and bell peppers going.
01:13I'm also gonna go ahead and throw in the garlic as well.
01:16I'm gonna add in just a little bit of salt.
01:18And we're gonna cook these down till they're nice and tender.
01:20We love a Sloppy Joe.
01:21That used to be, like, what my mom would fix
01:23when they would go out.
01:24We'd always have Sloppy Joes for some reason.
01:26Once those onions are translucent,
01:28I'm gonna crank up the heat and add in the meat.
01:30All right, check it out.
01:31You can see the flavor that's developed along the skillet.
01:34That's what I want.
01:35For our Sloppy Joe sauce, you can use the can if you want,
01:39but this is all the stuff you need.
01:41Mainly ketchup, mustard, tomato paste, some brown sugar,
01:45some Worcestershire, this adds a little saltiness,
01:48a little heat, some Tabasco,
01:50and then just a little bit of garlic powder.
01:52And I'm adding in a little bit of water
01:54just to make it a little saucy.
01:56I need to add in a little bit of pepper.
01:58That part is done.
01:59Now we just make our little topping
02:01with my little special surprises.
02:03All right, for the topping,
02:05the star of the episode, the Jiffy Corn Bread Mix.
02:09One third cup of milk and one egg.
02:12So I'm gonna mix that up.
02:14I always add in sour cream to this mixture.
02:16It just kind of makes it a little bit more moist.
02:18Some cheddar cheese and a little more hot sauce.
02:21Now, before I pour this over the top,
02:23I'm adding in the little surprise
02:25I was telling you about.
02:26My husband puts, when he makes his sloppy joe,
02:29he makes it with mayonnaise, cheese, and pickles.
02:33And I have to say, pickle was a nice touch.
02:36So I'm just gonna add in a little bit of pickle.
02:38You can leave this out if you don't trust me,

02:44Corn bread goes straight on top.
02:46You don't want it to mix in,
02:47so try to get it, you know, just an even layer
02:50for making it up as I go.
02:52It's kind of perfect.
02:54That's it, into the oven until it is golden brown
02:57and delicious.

03:07Now, you know this is one of those things
03:10that's gonna need to sit for a minute
03:12and we don't have that kind of time.

03:17This is your weekly dinner, y'all.
03:20Don't sleep on that pickle, okay?
03:23Because it kind of makes it.
03:24The corn bread is like definitely not dried out,
03:27but it's crusty enough that it kind of like sops up
03:29the sloppy joe sauce, you know?
03:31It's sweet, it's salty.
03:33You taste a little bit of that briny pickle,
03:35but then you get a little bit of the kick from the Tabasco.
03:38I mean, it's just like a sloppy joe, but like elevated.
03:41This was a good place to start.
03:43This next one is my take on the viral corn casserole.
03:46We're gonna update it and load it up.
03:48So I'm gonna call it loaded corn casserole.
03:51This is gonna be your go-to side for the holidays,
03:55for any special occasion, or just a delicious dinner
03:58even would be great next to anything off the grill.
04:01So I'm cooking up like six pieces of bacon
04:03that I've chopped up.
04:04We're gonna cook that really crispy
04:06while at the same time melting a stick of butter.
04:10This one's really easy.
04:11This is a dump, dump, and go situation.
04:14So don't blink and don't go anywhere.
04:16Okay, I just wanna be sure every little piece is crispy.
04:19Are you a crispy?
04:20Bacon or a chewy bacon?
04:22Crispy.
04:23Crispy, like a normal person.
04:24That's what you want.
04:26Okay, crispy.
04:28I'm gonna go in with about a tablespoon of the bacon grease
04:32and then I'm gonna drain the rest of my bacon.
04:34So I've got a can of cream corn
04:36and then a can of regular corn kernels
04:38that I'm gonna drain.
04:40This is like a spoon situation, okay?
04:43This is not gonna be pieces of cornbread.
04:45This is a side dish.
04:46It's like corn pudding.
04:48And then our friend,
04:51some sour cream,
04:54and then cheese.
04:56Okay, and then I'm gonna stir in our bacon
04:59and then some green onions.
05:01You really just need the green parts for this.
05:03And then finally, a little bit of Cajun seasoning.
05:06What's the name of that one?
05:08Slap your mama.
05:10Just don't slap me.
05:11All right, and that's it.
05:12Now, I've seen some recipes where they put an egg in
05:14and some do not.
05:16An egg won't hurt it.
05:18It's just gonna like puff it up just a little bit.
05:21That is gonna be good stuff.
05:23I'm just going to pour it in our casserole dish.
05:26Oh, this is gonna be good.
05:27All right, so that's it.
05:29This just goes into the oven,
05:31350 for probably about 40 minutes or so.
05:34We'll check it in a little bit.
05:36Oh, this smells good.
05:39Toasty around the edges.
05:41The inside is gonna be nice and soft.
05:44That is some hot corn pudding.
05:47And my mouth just started watering.
05:51A hundred percent, why have I not made this
05:52for Thanksgiving every year?
05:54It is so good.
05:55It is so like rich and creamy.
05:57You get like the bits of corn in there,
05:59but also like that crusty edge.
06:01That bacon makes you think it's like a full meal.
06:03Like this could be your main dish, not even your side.
06:06Winner, winner, winner.
06:09You have to make this.
06:10I don't need to sit here and eat this whole thing.
06:11We got one more to make.
06:13All right, now I'm giving you my go-to cornbread recipe.
06:20This is when the weather starts getting cold
06:22and you make your chili, your beef stew,
06:25anything where you want a side of cornbread,
06:26this is the recipe I love.
06:28I'm doing my jalapeno cheese cornbread muffins.
06:32So I'm gonna start with two eggs,
06:35two thirds cup of milk.
06:38And then in with our two boxes.
06:40And then in with some sour cream
06:43and some more creamed corn.
06:44Now, if they have just the small can,
06:46that's like a better size to get
06:48because you don't need this whole can.
06:50Jalapenos, pickled jalapenos doesn't add too much heat,
06:54but it adds great flavor.
06:55And then our cheese.
06:57I'm using a cheddar jack.
06:58You could use like a Mexican blend, whatever you want.
07:02See how good that looks?
07:04Yes, Nicole, I see how good that looks.
07:06Okay, so I'm gonna do muffins.
07:09So you definitely want to give it a little spray.
07:11And then I'm just gonna spoon it into our muffin tin.
07:15Also love it because it like makes exactly
07:18what it's supposed to make.
07:19Two boxes equals exactly 12 muffins.
07:23Now, what I thought would be a cute idea,
07:25just to let people know that there are jalapenos in here,
07:29let's just put a little slice
07:31of fresh jalapeno on the top.
07:33Cute, cute, cute.
07:35These are going to bake at 400 degrees
07:38just for about 15 minutes.
07:40Bring that to the next chili cook off.
07:42You'll win.
07:43See what I mean?
07:45They just work every time.
07:47How good do those look?
07:49Perfectly golden brown.
07:50And wait till you see the inside.
07:52These are a great thing to bring like, you know,
07:54like if you bring dinner over for some friends
07:57and maybe it's some stew or soup or something,
08:00but to make these little muffins on the side.
08:02They'll think you went all out on a homemade adventure,
08:05but we know the secret.
08:07Serve them up in a cute little basket.
08:10Seriously, seriously.
08:13It's just the perfect recipe,
08:14thanks to our little secret ingredient.
08:16I think the biggest problem with cornbread
08:18is that they're just too dry.
08:20They're like super crumbly
08:21and that's just not the way I like my cornbread.
08:23It's not going to happen with this recipe.
08:26Look at that.
08:27I mean, you can see the moist, sweet, juicy corn in there,
08:31the cheese, the little flecks of jalapeno.
08:34I mean, so many other cornbreads
08:35you have to like sop into the soup.
08:38This one's good on its own.
08:39It's just delicious.
08:40I mean, you get the little kick
08:41from the jalapeno for sure,
08:43but it's also salty and sweet at the same time.
08:46Y'all should try this cornbread.
08:47If you never made cornbread,
08:48just start with this recipe and then go from there.
08:51I hope I've shown you that you can make a lot more
08:53than just plain old cornbread with a box of the good stuff.
08:56Not only do these taste amazing,
08:58but they were so easy to make
08:59and really they can be made so fast.
