00:13Today, I'm making Chicken Triple Szechuan Rice.
00:16It's an Indo-Chinese style recipe and we all love Triple Szechuan Rice.
00:20I've already shared the recipe of Veg Triple Szechuan Rice.
00:23You all like it a lot.
00:24And today, I'm sharing the non-veg version of Chicken Triple Szechuan Rice.
00:29In this recipe, it's very important to add a red chili paste to the Szechuan style Indian-Chinese gravies.
00:38Some people add Szechuan sauce but the main base of gravies and Szechuan fried rice is red chili paste.
00:46I'll tell you how to make red chili paste at home first.
00:50After that, we'll make Chicken Gravy with a combination of Szechuan rice and noodles.
00:57After that, we'll serve this recipe.

01:03It's Indo-Chinese style, spicy and tangy.
01:06Let's see how Triple Szechuan Rice is made.
01:09For the chili paste, I've deseeded 20-25 Kashmiri Red Chilies and soaked them in hot water for 30 minutes.
01:15As you can see, it's soaked well.
01:18You have to add these chilies to a mixer grinding jar.
01:21Add a little water and make a fine paste out of it.
01:28As you can see, I've made a fine paste out of it.
01:33Now, heat a pan on high flame.
01:36Add 1 third cup of oil to the pan.
01:40Once the oil is hot, add the chili paste to it.
01:45Add a pinch of salt to it.
01:47Stir the paste and cook it on medium-high flame until the color of the paste changes to a dark color.
01:56The texture of the paste will become crumbly.
01:59You have to cook the paste well until you get that texture.
02:03After 8-9 minutes, you can see that the color of the paste has changed.
02:10It means that the paste is cooked well.
02:13At this stage, add 1 tablespoon of vinegar to it.
02:15Vinegar acts as a preservative.
02:17Mix the vinegar well.
02:20You can see that our homemade chili paste is ready.
02:24I've made this homemade chili paste in a large quantity.
02:28I'll be using a little of it.
02:29You can store this chili paste in an air-tight container in the fridge.
02:32The excess oil from the chili paste comes up and preserves the paste for 1-2 months.
02:38Whenever you want to make a recipe at home like Sejuan fried rice, noodles, triple sejuan rice,
02:44or if you want to make a gravy like sejuan chicken, veg manchurian or sejuan style,
02:48you can use this chili paste.
02:50You can also use chili oil.
02:53If you're making hakka noodles, you can use a little of it.
02:55If you're making fried rice, you can use a little of it.
02:56Chili oil has a lot of flavor and gives a good color.
02:59You don't have to use any artificial color.

03:04The chili paste is ready.
03:05Next, we have to make a chicken gravy.

03:09Here, I've taken 350 grams of chicken breast.
03:12You can also use thighs.

03:18Add salt to taste.
03:20A pinch of black pepper powder.
03:222 teaspoons of ginger-garlic paste.
03:241 teaspoon of light soy sauce.
03:26And 1 teaspoon of homemade red chili paste.
03:29Now, you have to mix everything well.
03:31You have to do it with clean hands.
03:32First, wash your hands.
03:33Mix it well.
03:35Once you've mixed it well or marinated it,
03:37after that, you have to add 1 egg white.
03:41After adding the egg white, I'm adding 3 tablespoons of corn starch.
03:45Now, you have to coat the chicken well with the corn starch and egg white.
03:49The chicken has a thin coating.
03:52It won't turn out like fritters.
03:53So, it looks good.
03:54A chicken with a thin coating should have a coating like this.
03:56Once you've marinated the chicken like this,
03:59you have to fry it.
04:00I've heated the oil in a pan.
04:02I've heated the oil to 170 degrees Celsius.
04:06We have to fry the chicken on high heat.
04:09Once the oil is heated,
04:10add the chicken to it slowly like this.
04:13Since the chicken is breast, it will cook quickly.
04:15So, make sure that the coating is on the outside.
04:18The chicken should have some structure.
04:20Within 3-4 minutes, the chicken will be perfectly fried.
04:23If you're using chicken thighs, it will take more time.
04:25So, you have to fry it on medium flame.
04:27Once the chicken is fried like this,
04:29remove it from the strainer.
04:31Put it in a sieve to remove the extra oil.
04:34Similarly, fry the remaining chicken.
04:37Once the chicken is fried,
04:38I'm removing some pieces from the fried chicken.
04:41Put these pieces on a chopping board
04:44and roughly cut them like this.
04:46We're going to add the fried chicken to the fried rice.
04:50So, cut the chicken like this and keep it aside.
04:53We'll use the remaining chicken for the gravy.
04:56To make the gravy, put a wok on high flame
04:58and heat it well.
05:00Now, add 2 tablespoons of oil,
05:023 tablespoons of chopped garlic,
05:041 tablespoon of chopped ginger,
05:06some spring onions,
05:07and 1 chopped green chilli.
05:10Fry the ginger and garlic on high flame for 1 minute.
05:14Now, add 1 teaspoon of light soy sauce,
05:163 tablespoons of ketchup,
05:182 tablespoons of red chilli sauce,
05:201 teaspoon of vinegar,
05:211-2 green chillies for spiciness,
05:242 tablespoons of coriander seeds,
05:261 pinch of white pepper powder,
05:28and salt to taste and stir well.
05:33Now, add 2 tablespoons of homemade red chilli paste
05:36and stir well.
05:38Then, you have to add hot water or chicken stock.
05:41Add as much water as you want to make the gravy.
05:43I've added about half a liter of hot water.
05:46Stir it well and bring it to a boil.
05:55Once it comes to a boil,
05:56we have to make a cornstarch slurry to thicken the gravy.
05:59So, in a bowl, add 1 tablespoon of cornstarch
06:01and 2 tablespoons of water and mix well.
06:04Now, add the slurry slowly and cook it
06:07until the gravy thickens.
06:09You can see that after adding the slurry,
06:11the gravy has thickened well.
06:16Now, I've added half a small shredded cabbage,
06:201 julienned carrot,
06:22and 1 julienned capsicum.
06:25Also, add some spring onion
06:26and the fried chicken.
06:29Now, while stirring all these ingredients,
06:31you have to cook it on high flame for 2-3 minutes.
06:34Once you've cooked it for 2-3 minutes,
06:37add some spring onion greens on top.
06:39And you can see that our Sejuan style chicken gravy is ready.

06:50if you add capsicum and onion petals,
06:52then Sejuan style gravy chicken will be made.

07:36You have to heat up a wok.
07:38Once the wok is hot, add 2 tablespoons of oil.
07:41Now, add 2 tablespoons of chopped garlic,
07:431 teaspoon of chopped ginger,
07:45some spring onions,
07:46and you just have to cook them for a minute.
07:49Now, add 1 third cup of chopped cabbage,
07:521 third cup of chopped carrots,
07:54and 1 third cup of chopped french beans,
07:56and toss them on a high flame for a minute.
07:59Once you've cooked the vegetables,
08:01set them aside for a while.
08:03Now, in a bowl, you have to beat an egg.
08:06Once you've beaten the egg,
08:08add the egg in the middle.
08:10Let the egg set for a while.
08:11Once the egg is set,
08:12break it into small pieces like this.

08:20Now, I'm adding cooked Sella Basmati rice.
08:22I had cooked 1 cup of rice.

08:321 teaspoon light soya sauce,
08:341 teaspoon vinegar,
08:351 teaspoon ketchup,
08:371 green chilli paste,
08:382 tablespoons homemade red chilli paste,
08:40a pinch of sugar,
08:42a pinch of white pepper,
08:43and salt to taste.
08:45Now, you have to stir everything well
08:48and cook it on a high flame for 2-3 minutes.
08:51Once you've cooked the rice,
08:53add spring onion greens at the end.
08:56Add the chopped chicken as well.
08:59Mix everything together.

09:02our rice and noodles are ready.
