00:00So we are in Seb's, the basement of Margaux. Tell me about it.
00:04It is a kind of blend between a cocktail bar, restaurant and a kind of like record vinyl
00:15kind of music venue. Gonna have our own cocktail lab within the site and getting some kind of
00:22specialist equipment within there. And then we're gonna have the kitchen all cooking over
00:27cold grills with like an influence of every kind of different cuisine from Middle Eastern to
00:34kind of like some like Texan barbecue stuff and yeah kind of everywhere.
00:40So how does the experience differ from what you're offering upstairs?
00:45So upstairs is kind of like your kind of classic sit-down structured dinner. It is what we do
00:53very well as a company. We have Ox & Finch, we have Kapow. We know how to do that. We know how
00:58to serve people. We don't have to do that. We are switching it up a little bit. We're going to be
01:02doing something we've never really done before but out of our comfort zone. Like a bit more focus on
01:06drank, a bit more focus on like the vibe with the music and stuff going on. So yeah just a kind of
01:13slight change up. So tell me a wee bit about the design then. The building, I mean it's quite full
01:22Yeah so it's like an arch roof and we're going to get specific speakers. They're going to go in here.
01:29They are shark fin design speakers. So they go up and out to spread over the kind of archway.
01:36So the music should be spread out equally like amongst the diners. So the way we kind of see it
01:41is like almost like really really really good background music. So like it's never going to
01:47be like a nightclub. It's going to be like quite a chilled vibe. You should still be able to come
01:51have a couple of drinks with friends or dinner. Be able to hear each other but the music should
01:55still be really good, really well curated.
