00:00I suppose what makes this site pretty unique and special is it's one of the only estuaries
00:07in WA that's permanently open to the sea so every day just over here we get constant tidal flush
00:13of seawater but we've got a huge catchment up the back of the stirlings all through
00:19to the north of us where two large rivers feed this system. It's about 45,000 square
00:24kilometre catchment so that really drives the food source in this estuary. A lot of
00:30national park behind us there's no industry here it's a very very pristine site. You know you can
00:37see abundant seagrass it is a pretty unique system in WA for sure. This part of the oyster is what
00:44we're checking to make sure that there's really good condition which will make it nice and creamy
00:47and the whiter the better in that part of the oyster. This is where the adductor muscle just
00:50brings the sweetness and then on the outside we're looking for a good presence of veins which
00:54signals that the oyster is in good condition.
