Mexican chef Elias Silva Resinas shows us how to make the perfect tortillas for making tacos with!

00:00Hello everyone, my name is Elias. I'm the head chef of Villacanta and today I'm going to show you how to make tortillas.
00:08We're going to start making the tortillas. So to make the tortillas, we need to mix corn flour.
00:13This kind of corn flour you can find in any store here.
00:17I'm just going to add a little of that and a little bit of warm water, just a tiny bit.
00:23And we're going to mix all this, that is going to turn out into a masa.
00:27Masa, in Mexico, we use it for everything. We use masa to make tamales, tortillas for the tacos.
00:34It's the primary ingredient in Mexican food.
00:37So we're just going to mix all this. Just mix it with your hands.
00:43We're looking to get kind of like a dry dough, a dry masa, how we call it in Mexico.
00:51Just mix it super well.
00:54That's it. Once you get kind of like a dry masa that doesn't stick in your hand, it will be ready to go.
01:01So get a wet towel, just put it on top of your masa while you turn on the pan for the tortillas
01:09so the masa doesn't get dry and then they're going to break.
01:11Once the masa is ready, just start making small balls so you can press them after to make the tortillas.
01:19Just make sure whenever you're rolling to make the small balls, put kind of pressure so the tortillas, they're nice and tight.
01:26Just put it back straight in the same bowl as you keep making them.
01:30I'm just going to use them right after now.
01:33Just make small balls. It depends how big you want your tortillas.
01:37If you want them big, make quite a big balls. If you want small, just make tiny balls.
01:42I would recommend you about like 15 grams for a piece of tortilla.
01:47Remember, tortilla is just corn and water so they're gluten free.
01:50They're perfect for every occasion. You can make tacos, you can make quesadillas, you can make millions of things.
02:00We're going to start pressing the tortillas. If you don't have a press, you can just get a rolling pan, some paper, roll it and then just cut it with a cookie cutter.
02:08Depends the size of the tortilla that you're looking for.
02:11Just get a plastic bag, like a sandwich bag. Just cut it off, divide it in two.
02:16Get one of your balls. Just put it right in the center. Press a little bit.
02:23Just press a tiny bit. Fold it back again. Press again.
02:40Next step, let's turn on the pan. Medium high heat.
02:50We're just going to press the tortillas, put them there. 30 seconds on one side, about 45 seconds on the other and then just finish it for 10 seconds.
02:58There's a saying in Mexico that if your tortilla pops, you're ready to get married.
03:03Make sure you have a towel where you can keep them warm at all the time.
03:08So here you have your tortillas ready to go. You can make tacos, you can make quesadillas.
03:15You can make everything, put everything you want on top.
03:18The whole process to make the tortillas, for about four people, it will take about 20 minutes.
03:23Just enough for everyone to have two to three tacos.
03:27I wouldn't freeze the tortillas. I would just make them fresh all the time.
03:31If you freeze them, they will break.
