00:29say hello. Hi Joseph, so can you introduce yourself for our lovely readers? Hello, I'm
00:36Joseph Sullivan, I'm from Horton near Preston and I own Doughboy Pizza Company. So can you
00:43just talk us through how this all came about? Is it true that you started off so many years
00:50ago in your mum's backyard? Yeah, so I was working in France actually as a private chef
00:56in the ski resorts doing like cooking in chalets for guests every week and then lockdown struck
01:02so I couldn't really do anything. I bought a little pizza oven and started selling some
01:09pizzas, you always wanted to do it. So I bought a little pizza oven from Gosney, it was actually
01:13the Gosney Rockbox. These are the domes that I use now, I've upgraded. So I bought a little
01:18Gosney Rockbox, started selling them to the neighbours, family, friends and it's just gone from there really, it's gone crazy.
01:25And so would there be, how many types of pizza do you do then? Well we do all the classics obviously,
01:32then we do the Doughboy favourites, we do our own garlic breads, we even do dessert pizzas.
01:37Dessert pizza, what does that entail? Yeah, so it's like custard, custard base, chocolate brownies,
01:44Nutella and all that sort of jazz. I started doing these bake at home pizzas as well, which we sell them in Mercer's Butchers in Bamber Bridge and also at the Texaco
01:55Garage in Houghton, so they're available to buy now if you'd like one. So how much would that set you back?
02:00These are recommended retail, they're about £8 and then for like the pepperonis £9 and then for like the sort of favourites you're looking at about £10.
02:11So they're a bit more expensive but it's all fresh, good quality ingredients.
02:15So talk me through the ingredients then, where do you source your ingredients from for your pizzas?
02:23We use a really good supplier called G&O over in Stockport, they provide all proper Italian
02:30proper stuff, so it's all expensive but the quality of the ingredients is unbelievable.
02:35Wow, and have you any sort of, so you work from, talk me through where you work from
02:41sort of every day, is it key in place? So we've got a little unit up at Huntley's which is like
02:46our little prep kitchen, we've got two of these trailers which are on the road at the minute,
02:50we've just bought our third, so that's actually in production now getting built for us
02:56and obviously we do the bake at home, we do it all in here really, so we do lots of weddings,
03:01events, all that sort of stuff, so yeah, it's always on the road. Perfect, so if somebody wanted

03:23And you're gonna cook us a pizza now so we can have a look at the plain rice platter.
03:27Perfect. I've got a dough ball here, I'm just gonna press it out, do you want to come in here, do you
03:34reckon it'd be better if you come in? So yes, talk us through then from start to finish a margherita
03:40pizza it is we're doing. Yes, so I've got a dough ball here, we hand stretch every one of our pizzas,
03:46just getting all the flour off here, getting it into the right shape and size,
03:50moving all the excess flour out the way, get it to about a nine inch pizza there,
03:55and we've got some San Marzano tomatoes which are DOP Italian which just means that they are from
04:03San Marzano and they are what you're buying, put them on there. So good quality ingredients. Yeah
04:08they're expensive but all we do with that is just put salt in it. So basically like bringing a taste
04:14of Italy back home to Lancashire. That's it, using the best ingredients gets the best product, so a
04:19bit of fresh basil, put that on there, a bit of pecorino cheese, just gives it a nice little zing,
04:27and then this is a fjord latte mozzarella, so it's like a really high quality mozzarella dried.
04:36Get it onto our Gosney peel which they kindly sent me, this is one of the new peels,
04:41it's amazing, so if you're making pizzas at home I do recommend getting one of these ones,
04:46and we're going to stretch it into about a 12 inch pizza, and then straight into our Gosney dome
04:52over here. And then how long does it take in the oven? They don't take long, so this oven's
05:00actually rocking up at 450 degrees at the minute, so it's going to take us about 60 to 90 seconds.
05:05Oh wow! So not long at all. I'm just going to check the bottom, make sure we're not catching.
05:11Here we go, 90 seconds later. Wow, look at that. Just give that a slice. A pizza lover's dream that.
